Thank you soo much for showing the proofing and the baking! I have been shown a lot of dough shaping videos by the KZbin algorithm but they always stop after the shaping. It made me suspicious to not try it because the intricate shapes they made didn't really seem like they would hold up to proofing and baking. These on the other hand look pretty, delicious, and you have shown that my time won't be wasted trying them out!

Hi , I have trouble for shapping. Whenever I shape it nicely, the shape ruined on final proof . And if I tried to fix it , ex: pinch it, the dough wont attached anymore. Please help for any clue 🙇🏻♂️

Hi :) what do you mean the shape is ruined after the final proof? I find that I have to roll the dough pretty thin when shaping so that it still keeps it shape during the final proof when it gets puffy. Also it doesn't stick well if you try to fix it after its final proof because the dough is drier by then, and you might ruin the shape. So the best thing to do is try to form it into the shape you want before proofing, but it you really want to pinch/fix something you can add a bit of water to the area you want to fix so it becomes sticky again.

@@FlouryKitchen thank for reply! :) I mean after I shape the dough, the shape messed up when it gets puffy! I will try on my next experiment, use water a bit for pinch the dough when shaping and roll the dough into thin layer before shape.. today Ive already make bread and pinch the dough bit hard but it wont help, wont stick to each other when its puff and more difficult to stick when I tried to fix (as you said). thank you floury, let you know when I've tried the tips above. stay safe!

@@NickyHadioso If it still won't stick, it might also be because your dough is too dry. You can add a bit more water to make the dough more moist or just brush a bit of water to the pieces you want to stick to help it stay together. I hope this helps :) let me know how it goes. @@FlouryKitchen hi! Ive tried using more water on the dough, its so sticky. Its difficult to round the dough with hand for bulk fermentation stage. The result , yes, it has more grip to each other but still ruined on final mix. When I want to fix it, I use water to re attach (after final proofing) , but it wont stick. Today I will try to add water before attaching the dough. I hope this work. Will let you know the update 😆 thank you floury!
