I have watched absolutely loads of channels offering budget meal ideas but this is the best by far. Most of the others buy canned refried beans, or tortilla chips, soft tortillas etc but you show how to make it all, so no nasty chemicals and preservatives. Real cooking from scratch. Thank you so much.

I admit that I’ve used canned beans and tortilla chips for lots of things but when it comes to really sticking to a budget, making thing from scratch makes a huge difference. And I definitely LOVE that I’m avoiding the preservatives and unnecessary chemicals when I make things from scratch 😄 I want to do that as often as possible!

Great video! I love that you purchased the sugar, flour and butter! So many “budget” videos call those things a pantry staple. I suggest that if you are on a budget you buy whole milk. You can add some water to it to extend it. 👏

You and I have a lot of same ideas…only thing since I have LA roots…I cook my beans( red beans) with onion, garlic, Cajun seasoning and smoked sausage. Then serve them over rice with hot peppers on the side. Also, I make a broccoli cheese soup out of my broccoli, then I use any leftover soup to put on baked potatoes…top with some canned fried onions( not only for green bean casserole! Lol), served as a meal. We also have oven fries served with any brown gravy over them as a meal that I save from a pot roast or pork roast…that has bits of the meat that fell apart.

Love that everything is from scratch! I always try to reverse meal plan / use what I have in the pantry first and then purchase only what I need for recipes which definitely has been helping cut costs. I also try to shop at Aldi when I can but all are located about 1/2 hour way so it’s not always super convenient - but definitely is cheaper there. For sure interested in trying these meal plans and seeing how much it costs with reverse meal planning and shopping at Aldi. Great ideas!

To get a little more budget out of your dairy you can always buy full fat/whole milk and just add your own water to it if you want it. That way your not paying for the water and it can stretch a bit more. Also full fat can help feel full longer and bulk up what your eating so that helps too, even without adding any water. 😊

Really good video, Laura. I can’t get into canned vegetables. Too much sodium. But I can see how it is easier. The chicken or beef bouillon cubes are a lot cheaper than boxed broth & pretty easy to use.

@@LauraLegge It worked perfect for black and pinto beans; I had ran out of Northern beans. I put about the equivalent of one bag of beans (NOT soaked) in the instant pot with six cups of water. I added all of the seasonings you mentioned and some Better than Bouillon. At first I cooked it for 25 minutes with a natural release. They weren't quite done. So I added 10 more minutes and did a quick release. I unplugged my instant pot and left the house to do errands. I came back to find they were just right. I thought I would have to reduce the liquid.

I recommend refrigerating it due to the unsalted butter and I would say it could last up to a month. It’ll separate in the refrigerator so just be sure to stir it before serving 😄

I only had a couple pieces of leftover broccoli from what my kids didn’t eat and from when my husband didn’t end up eating one of the meals I already prepared 😅 so there shouldn’t be any leftover broccoli if it gets eaten with the first meal it’s prepared with but if you have any leftover, you can definitely use it! 😊

I use a few different pans. I usually use my Awesome Pan from Aldi. It’s rare to find them in their value aisle but I believe mine was around $25! I also use my Lodge 6qt Dutch Oven and I occasionally use a T-Fal skillet I got from Costco ages ago (that’s what I used for the tortillas). I also have a Lodge Cast Iron skillet that I used for the refried beans 😄 I have more but those are the main pans/pots I use right now haha. I have some links in my description of my favorites, if you need them!

I worked in food for a really long time and in my experience, the ones in the front were more likely to drop on the floor, be touched a ton, and not be as cold (if refrigerated), which meant it wouldn’t last as long once I got it home. It’s mainly a habit now 😅

I like that you use bananas a lot for your breakfasts. I love bananas. I have to limit how many I eat because of digestive issues, but man are they a treat! Also, you have a very nice ring set (off-topic, I know, but just wanted to compliment you on that). Your husband obviously values you very much. I turn 35 today and still have no husband because having Asperger's (which can be both a gift and a burden at the same time) and also mental health issues, it can make dating complicated for me. But I'm still praying God brings me a good man soon (before my fertility dies) who values me despite my differences.

Here’s the recipe for you! I make it all the time and it’s my favorite ☺️ I also have it in the blog post 2-Hour No Knead Bread Ingredients * 3 1/4 cups (425 grams) all-purpose flour * 2 tsp Fine Sea Salt * 1 tsp Honey or Sugar * 1 packet Instant Fast Acting Dry Yeast * 1 1/2 cups Warm Water (105°-110°F) Instructions 1. In a large bowl, mix together flour, salt, honey or sugar, and yeast. Add warm water (use thermometer to make sure water is between 105-110° F before adding) and mix together with a wooden spoon or spatula. 2. Cover with plastic wrap and let rest at room temperature for 1 hour. 3. Remove plastic wrap and turn out dough onto a well flouted surface. Fold the edges over until the dough feels a little tighter and holds its shape. 4. Lightly flour the top of the dough and then transfer to parchment paper, smooth side up. Cover loosely with plastic wrap as the oven preheats. 5. Place a Dutch oven with the lid into the oven and preheat the oven to 425° F. (Make sure your Dutch oven and lid are safe for the oven before doing this) 6. Once the oven has preheated, CAREFULLY remove the Dutch oven (it will be extremely hot!!) and place the dough, along with the parchment paper, inside the Dutch oven. Cover with the lid and bake in the oven for 30 minutes. 7. Then carefully remove the lid and bake, uncovered, for 10-15 minutes, or until the bread reaches your desired level of doneness (as light or dark as you like). 8. Remove from the oven and carefully lift out of the Dutch oven and place on a cooling rack for at least 20-30 minutes before serving. (This step is extremely important to allow the bread to finish cooking, otherwise the bread will be doughy still in the middle.)

So some people claim that the word NACHO is actually the chemical formula used to make Nacho cheese sauce, sodium carbon hydrogen oxygen, otherwise known as sodium citrate. Whether or not it is the true origin of the word, sodium citrate is a convenient and easy way to make a cheese sauce. Sodium citrate is an emulsifier, or thickener. It can be easily made at home with some lemon juice and baking soda. So if other ingredients are running low or someone is avoiding gluten, or you just want a “fake” cheese sauce like you can get on the street, sodium citrate is a great alternative. In all fairness, I am not sure what chemical ordering system would result in these elements spelling NACHO, but it sure is a memorable coincidence, and a great kitchen shortcut.
