I love that you made an enchilada bake. This is how I always make mine now after a friend did it. So much easier to portion and I feel like it doesn't get soggy like sometimes they can when you roll them. We call it Enchilasagna because of the layers.

I love that name for it!! It's soooo good, definitely how I'm going to start using more.leftovers too. Anything covered in cheese sauce is 10/10 imo!

You always have such great meal ideas! I should definitely try the gnocchi! I took some leftover roast beef tonight and made a taco soup with it.

Do you add salt to the gnocchi dough? Or just after they're cooked? I made them tonight and they were a hit. I'm soooo full!

I usually add salt to everything! 🤣 I also salt the water too! I'm so glad they turned out!!

I haven’t found any whole chicken. that’s cheaper than Costcos cooked rotisserie chicken for $5.33. I take it off the bone & then make broth from it. New subscriber!
