You can do it Janus…January 1, 2022 at the age of 60, I weighed 240 lbs…I was disgusted with my physical fitness. I had been doing the Shampoo diet (lose, gain, repeat) most of my adult life so I changed my mindset. Instead of going on a diet, I decided to change my diet. Instead of living to eat, I wanted to eat to live. I watched a lot of Dr Berg KZbin videos on the Ketogenic way of eating. I started eating two meals a day and after a month, I switched to eating one meal a day. I also began walking every other day. In June, I had my doctor do a blood test. It was the best test results ever. It’s now January 1, 2023…I’m 61, I’ve lost 50 lbs, with the guidance of my doctor, I have eliminated 8 medications (I’m drug free) and I now walk 8 miles every other day. I do have a day or two a month when I splurge (cook a Chef John meal or eat ice-cream, pizza, Chick-fil-A…) but I really have changed my diet. I have eliminated temptation by only keeping food I should eat stock in my house. If I want a treat at night, I make it difficult by having to get in my car to drive to Publix for ice-cream or peanut M&Ms. I wish you the best, Janus

I have discovered coconut oil! I use it in most anything that needs oil now. I bought it to make snowy mooncakes and so I made them multiple times in multiple ways. Then the jar sat on the counter while I cooked all week and instead of getting the other oils out I used it for all things except frying. I don’t know what will happen if I fry but now I have an air fryer and soon I will find out. Also I made purple potato skin mooncakes with purple potato white chocolate filling.

I always peel any apple I eat. I very much dislike apple skin. I'm not sure why. I finally found a basic apple corer and with my trusty peeler, those two tools make peeling and coring and apple very easy! The corer is nice if you want to make a baked apple and stuff the core with butter and brown sugar and bake at 350 for 45 minutes. The butter and brown sugar will melt in the oven and make a delicious sauce that can be spooned over the baked apples. My mother would make those for us so we could have dessert even when the budget was tight! Happy cooking everyone and Happy New Year! Healthy donuts? That's a food sin! hehehehe just teasing! Thanks I will save this recipe for the fussy / special eaters that I meet in my travels!

Just want to say that these bars are only healthy by certain standards. Dates are basically sugar, and coconut oil is a saturated fat. Also nuts are very high in fat. So yeah, the nutrients and fats etc. Are good for you, better than a candy bar, but in terms of calories they are quite nuclear. They are basically sugar and fat. So I personally would rather eat a few dates and almonds separately, that way you can control your portions much better. Just think about what your actual health goal is when you choose what to eat!
