If you want the best of bengali cuisine , go to Bhojohori Manna in kolkata, it one of the most famous restaurant chain, take reservations before hand, its always full booked. Try a lobster dish along with mustard Ilish (hilsa) fish with pulao, these dishes will blow your mind

Bengali Kochuri typically has peas in it- called motorshutir ( peas) kochuri. And it's white because in Bengal usually Puri or kochuri are made with refined wheat flour ( maida), while rest of India usually uses regular wheat flour ( atta).

You are correct. However, Kolkata is not that good when it comes to breakfast. City is late riser and doesn't have mass scale outlets for ready food with fresh fruit juiceslike in Chennai, Bangalore

If you have zomato or swiggy search it and there are various haldiram stores here in Bengal don't say haldiram is non veg now.

Medu vada was my favourite in childhood too.😂 And I didn't used to enjoy idli much. But I had a Malayali friend in College, who used to bring idlis with different kinds of coconut chutneys and lentil ones ( called podi)- which eventually converted me to enjoying idlis, and being less fried it is healthier, if cooked well and rhe sambar and other sides are well made too. With idli, try dahi idli, sweet one, you will enjoy that I feel ( and dahi wada too). In Mumbai sometimes the medu vadas aren't fried in good oil, so can make the vadas taste a bit off, especially the street food ones. You must also try some fried idli too in south Indian cities or other places of India where South Indian food are found. They usually serve that with the powdered lentil chutney called podi- and fry it with butter or ghee.

The Sattu-wala (whom you generously tipped 500) told Chris that he manages to sell around 100-200 plates daily. He sells each plate for Rs 20, thus his total sales amount to approximately Rs 2000-4000. But, when the guy (with green tees and red backpack) asked him at the end, he told that he makes a profit of Rs 500-700 a day from the sells. So Max, you indeed gave him a day's earning.

Third plate dish similar to chole is called ghughni- made of white watana -white dried peas - which is soaked and then pressure cooked and is usually only mildly spicy-so less hot spice eating people like Bengalis or foriegners can really just enjoy the simple taste of the protein dish. Are you sure you two don't have a Bengali ancestor, ghughni is my favourite from there too...😅 In Mumbai, you get ghughni too-in spicier form called ragda pattice, the ragda being the ghughni with some additional chutneys or spices and pattice- is usually potato based fried and flat dumplings.

India is just a subcontinent, each nation within Indian subcontinent has their unique culture, language and heritage. For something different but still very much a part of Calcutta food culture try Nahoum's bakery in New Market. The oldest Jewish bakery in the city. Their plum cake is the best in the world. Their cheese samosas, jam tarts, and brownies are the best! While in New Market look for Bondel cheese. It is the only indigenous cheese made in India (other than paneer). It's a soft smoked cheese, delicious!

Place 8: Smell wise the biriyani chaat one is only slightly different from jhal muri, probably by one spice mix. And I feel the simple jhal muri ( simialr to bhelpuri of Mumbai, but different too slightly due to some different ingredients like mustard oil)- too you might enjoy in Bengal.

At Sen Mahashai- idk what the second sweet name was, but it did look and smell like pistachios ( yes i have capacity to smell long distance- kind of similar to how people do long distance enwrgy healing or Reiki) like what Chris said. Max, this spirit of wishing to support a business you like, I used to have this same urge when jn US oe when visiting from US to India. ☺️ Now, I do that, but also only if food isn't just good tasting, but also cleaner, hygenic, etc. - and more than the usual norms in India. That pink one was called parijat sandesh. and sweet due to the parijat flower like flavour ( idk if they use actual parijat flower's flavouring- as I don't know the smell of that flower).😂

That egg roll of Kolkata is just simply not the same anywhere else in the world! Wish you had bought two rolls and tried two different kinds of egg rolls too with some veg or non veg additionally added, to it. Before going veg, in recent times, I would have double egg rolls or egg chicken ones in Kolkata, when visiting. And after turning veg, I tried paneer rolls, though it's not the same as egg rolls.😅😢
