Hello, thanks for your wonderful feedback. You absolutely can use chicken instead of the beef. If you use chicken breast you can switch it in the recipe as it is. But you can also use boneless chicken thighs. I love them because they are highly forgiving and stay juicy and tender even when cooked a little longer. With chicken thighs you can also remove baking soda from the recipe. Does this make sense for you? Where are you from? Is seafood also an option for you?

Super las preparaciones un detalle cuando se prepara alguna proteína en esos vegetales tan importantes se debe sellar la proteína agregar otro poco de grasa y seguir en el mismo wok o sartén yo veo que si cambias estos pierdes sabor y sazón en línea termine el proceso saca la proteína ya sellada salta el resto de las cosas vuelves con la proteína y así termina la preparación sin cambiar wok o sarten

Great question! When I say to cook the meat to about 70-80%, it means cooking until it’s mostly browned on the outside but still has a bit of pink or softness in the center. The meat should feel firm on the outside but still have a little give when you press it. This way, when we set it aside, it finishes cooking without overdoing it. Great question! I use baking soda in stir-fries to tenderize the meat. Baking soda is alkaline, which raises the pH on the surface of the meat. This higher pH causes the proteins in the meat to break down and make it harder to bond together tightly. This keeps the meat tender and juicy when cooked. It's a common technique in Asian cooking to achieve the soft, velvety texture of meats like beef and chicken. Just remember to use it sparingly, just a little baking soda is plenty.

Hi, thanks for your question. Don’t worry if the meat changes the colour. The brown color on the outside of beef happens when it’s exposed to air and oxygen-it's a natural reaction and doesn’t mean it has gone bad.
