വഴുതനങ്ങ കറി | Brinjal Curry
" നല്ല എരിവും പുളിയും ഉള്ള ചോറിന്റ കൂടെ കഴിക്കാൻ പറ്റിയ വഴുതനങ്ങ കൊണ്ട് ഒരു കിടിലൻ ഒഴിച്ചു കറി "
INGREDIENTS
Brinjal - 1 big or 2 medium size cut into pieces
For marinating brinjal :
Turmeric powder- 1/4 teaspoon
Red chilly powder- 1/4 teaspoon
Pepper powder- 1/4 teaspoon
Salt
For preparing curry:
Coconut oil- 2 tablespoons
Mustard seeds- 1/4 teaspoon
Fenugreek seeds- 10 nos
Dried red chilly- 1 no
Shallots- 10 nos chopped or ( onion - 1 medium sized chopped)
Green Chilly- 2 nos
Ginger- 1 small piece crushed
Curry leaves
Tamarind- 1 lime sized soak in 1 glass of water
Red chilly powder- 1/2 teaspoon
Coriander powder- 1.5 teaspoons
Turmeric powder- 1/4 teaspoon
Water - 1 cup
Jaggery- a small piece ( or use sugar) [ it is used to balance all the flavours and it’s optional]
Salt to taste
PREPARATION:
1. Cut the brinjal into quite big pieces and marinate it with turmeric powder, chilly powder, pepper powder and salt for 10 to 15 minutes.
2. Take a chatty, pour coconut oil.
3. To the hot oil, splutter mustard seeds, fenugreek seeds and dried red chilly.
4. Add shallots, ginger, green chillies and curry leaves. Saute for a few minutes.
5. Add the turmeric powder, chilly powder and coriander powder on low flame and roast well on low flame till all its raw taste and raw smell goes .
6. Add the tamarind water with an extra cup of water into it and boil well.
7. When it starts boiling, add the marinated brinjal pieces and cook it.
8. Add the required salt.
9. Boil and cook the brinjal well until the required consistency of the gravy is obtained.
10. At last add a small piece of jaggery or sugar to balance all the taste.
Brinjal curry is ready !!
