"juvet" is the definite form, the suffix "-et" corresponds to "the" in English. "Juv" is gorge, so this means "the gorge".

Thanks for watching our video, and you are pretty right about the grammar of the word. However, the main goal of the video was to help to recognize important and useful words on the signs that can make interest to travelers. The word "gorge" appears more frequently as "the gorge" on the signs... so it is more handy to look for "juvet" at the end of the word, rather "juv" in the middle. For example "Kjøsterudjuvet".
