Two 500’s would have been enough The third is just more unneeded weight

In performance boats you are right, usually the third motor doesn't add much on top end, but rather midrange and the gains aren't worth the trade. In Pontoons the drag coefficient is so high that in this case the extra HP helps. Twin 500's gets you in the mid to high 80's. This boat will run right at 100 mph.
