i cored and 1/8 my apples earlier this year. Any recipe or uses for frozen apples?

You could use the apples to make the apple juice and syrup. Just cook them with some water until syrupy. Add some sugar to make the syrup. Or buzz them up in a blender with some spiced rum for an autumn slushy
