The rotating ice packs is a really good idea. We do not travel with much, if any, frozen goods so it is just wasted space for us. Hail science!

For my windows I used 3M window insulation. For my slide out roof I used 2" foam sheets cut to size. It dramatically reduced heat from the slide out roof..

Is it normal to turn off refrigerator while traveling?

Yes! General advice is that running a fridge when it's not perfectly level can damage the coils/reduce efficiency/eventually burn out the unit faster, and a lot of people also like to turn their propane completely off while driving.
