I don't care how good the omakase is, if the restaurant has the noise level of a cafeteria. I would not spend any time suffering noise pollution.

The tamago was the end of the nigiri course, and the following nigiri pieces were extras I'd ordered after I enjoyed the tamago

This looks like a great restaurant, although a little pricy. But, as with most good ethnic based cuisines, however refined, many use the same basic ingredients and techniques to present their many dishes. For me, the most successfully-practiced of these super-flavor-profile food cultures are Japanese, Mexican, Italian, Korean, and Indian. These are most of my personal favorites. But still, how many times can you eat Uni, Garlic, Fermented Salty Soya Sauce, Ground-Chilies, Miso, or Cumin in a single meal, without wanting something different.
