I grew up in a Canadian city where the second largest ethnic group was Finnish and what was referred to as "Finnish Pancakes" was a staple around town. One of the restaurants called The Hoito was actually featured in a cooking show on tv because of how famous those pancakes were. They look exactly like these flat vintage pancakes do! They're such a delight to roll up, stack, fold, whatever and just eat. I've been making my own Finnish pancakes as of recently because I moved away, trying to mimic the ones I used to eat and also thought "I must be the only one in this town who makes these" just like Justine, haha.

I think most europeans make pancakes like this. Or in the shape of triangles (more easier to fold) We never were tought to make fluffy pancakes unless somebody really liked them 99.9% 😂. We add sodawater to the batter to make them fluffy. But most of the time we eat them like this, along with fruit jam or melted chocolate.Sometimes ppl prefer them as triangles, with icecream and toppings on top. The lemon is optional. We usually use vanilla flavour extract instead, that goes well with the cinammon.Powdered sugar is only sprinkled on top. Also the pancake needs to be cooked on both sides.
