At this point I’m fairly convinced that you are superwoman. Thank you, thank you, THANK you for giving us a glimpse at what this lifestyle looks like while working full time. I love so many homestead channels, but I feel like many of them are people who have been able to transition to quitting their jobs and relying on KZbin or other sources of income. I love that for them, truly, but as a working wife and mom sometimes it feels like I will never have the time, and seeing what you and your husband have been able to accomplish has been more encouraging than you’ll ever know. I so appreciate your channel and everything you share!

It was such a joy to watch you share your canning 101 knowledge with all of us. I am retired and living in a senior apartment, but recall the days when I put up all the produce from my garden. I passed on all my canning equipment, but sure do have the itch to at least jump back into it and put a few shelf stable items on my pantry shelves.

The baby chicks are just so adorable. The one piece of equipment my mom has been able to pass onto me is her water bath canner and I am grateful we have it. I have been looking at the thrift stores around here and all I can find is coffee pots. Apparently, people in Northern Michigan love their coffee. I've been looking for a kitchen aid for the last five years. I found one at Salvation Army, but I wasn't sure of the price. When I went back it was gone. I still want one. I like how you have your rings displayed.

You are correct about the nesco I bought a roaster after watching you do broth and tomatoes you are correct the Crock-Pot doesn't do it I am so pleased with adding that roaster to my collection of canning items. Lovely as always. The thing with jars is, if you happen to really like canning--you're going to need a lot of jars, I'm learning! I started beginning of February and I think I'm up to 60 jars canned now. Hopefully once some jar stock is established not too many will break each year, so there's less up front cost. Keeping my eyes open for a roaster oven! Thanks again for the video.

This brings back memories of long ago. Coming from a very large family. We always had a garden and my mother canned a variety of foods. Some of my favorites included, cinnamon pears, spiced crab apples, piccalilli, chow chow and green beans with Shellies.

I'm excited for this season. Started my seeds this morning for this year. Started seeds for the first time last year after watching you start yours. I had at least 98% success :) I had to give so may plants away, they did so well :) I canned all summer/fall. And I just love it. I've grown gardens for 25 years and canned that long, but it sure is fun to start from scratch. I have been seed saving as well, so excited to see what I can grow from them. God Bless

I also reuse food jars. My Amish friends reuse everything and their grocery stores sell new white lids for all jar sizes. I love the for-jar lids as well. I ordered them back in January when they were on sale and Leisa had her discount code. I use the pickle crisp in my pickled banana pepper rings. Works great. Clear - jel is for pie filling. My Amish friends introduced me to Therm - flo. It doesn't break down in canning like cornstarch does. Great video for learning. You have a wealth of knowledge. Thanks for sharing!

Great information! It is amazing how as we progress as canners, our equipment advances to the next step. Using a roaster oven would never have been on my radar in the beginning. My first purchase was a large pot to hold all the goodness, then a Mirror canner that held 7 quarts or 8 pints. I would can 60 quarts of green beans so it took a long time. When my mom stopped canning she gave me her canner and it only held 5 quarts. Something I never knew as a child helping in the kitchen during canning time. i gained a great respect for my parents and grandparents who always grew a garden and canned and processed food all summer. The one thing I never did in my early canning was meat but over the past 10 years I have experimented with canning meats and that is a great "fast food" when needing to feed your family in a hurry. Thanks for a basics video, I am really enjoying your channel! I took a canning class (spicy dilly carrots) on the Making app. just for something different to try. Now I am hooked! My carrots looked & taste great! I was so intimidated at the thought of canning, but now I know now that I can do it. I’ve planted tomatoes, cucumbers, peppers, tomatillos from seed for the first time (with canning in mind) & they are doing great! I’ll fill in with nursery plants. It’s time now to plant them in our community garden bed space, and some grow bags at home. I live on the OR coast & want to try canning fresh fish too. So, pressure canning is my next challenge to learn! I can’t wait to have my own home-grown (or Farmer’s market) food available in my pantry.

There's some wonderful suggestions here. I have put hundreds of jars of delicious food on my shelf in just 2 years with just a $20 water bath canner from Walmart and a set of tools in the box for $10 and whatever most people have at home, and JARS. I do have a 16 qt pressure canner that I haven't used yet, only 2 solid years in so I'm working on it. I have a lot more tools now and it does help but not necessary o get the job done. I can't emphasize enough to start small.

Your antique canner that you keep for looks is what I use for my canner. It belonged to my grandmother-in-law which my mother-in-law inherited, then I inherited it. It’s been doing a great job, and all the original parts are still on it. And yes it has been checked out by the local canner Expert.

Other good items to have on hand is a jar lifter, headspace measuring tool. If you are messy like me, extra towels 😂. If you have an Amish community in your area they are a great resource for bulk items...i have found pectins, clear jel, salt, citric acid etc. I would also suggest a canning book. I went used roaster oven shopping yesterday per your advise and because I couldn’t believe all the pan shuffling I was trying to do this week while canning. I went to 2 Good Wills and actually found one, BUT it was probably from the 50’s/60’s with the woven black/white cord. So I had to leave it behind. Thanks for sharing your knowledge. All my best

if you don't have enough rings I have used a tea towel fold several times, or a very thick facecloth or a silpa for the bottom of your pot, or even small cake cooling racks in my water bath canners

It’s always good even as seasoned canners to evaluate our supplies and what worked and what didn’t so that when the opportunity presents itself to purchase those things were in need of we know what’s lacking. I have a steam juicer that I purchased used. I’m very excited to put that to work this year and actually plan to use it before to long as I continue with the freezer clean out.

We went to a DAV (disabled American Veterans) thrift store and i found a 1972 mirro-matic pressure canner for $40….. bought a new gasket for it and it works great!! This is so helpful! I haven’t canned for years until recently! I absolutely love canning and putting up food for my family! Thankfully I have a lot of the supplies, the water bath canner, the Presto canner, the roaster( which I never thought to use for canning and have seen how much it helps). I also have the kitchen-aid food processor attachment. I still need to get a food mill, more lids, more jars, a steam juicer, and a dehydrator plus all the pickling salts and pectins.
