Quick tip on onions… take a damp paper towel or dish rag and put it beside your onions as you cut them and it won’t burn your eyes. I thought it was crazy until I tried it. Works wonders!

We dehydrate half of our pumpkin and can the rest. I powder the dried pumpkin and rehydrate it with the liquid from the jars of canned pumpkin. I them blend the two together until I get the right consistency. Works great for pies or whatever you need.

Love the family time and birthday prep. One note to save money on vanilla extract. I've made my own vanilla from bean pods and cheap vodka or rum. You just keep adding the extract carrier as you empty it. It takes 3-6 months to steep but lasts forever.

If you have the freezer space you can cook, puree and freeze your pumpkin. This is easier than canning and draining the canned pumpkin chunks. I love your videos!

I live in Louisiana, the only thing I would have done is cook the roux in the skillet and cook the sausage in the pot and added the roux to the pot, when adding the chicken brou, it would have broken the crumbs from the bottom of the pot, adding more flavor. Love your videos, keep up the good work.

I lived in Louisiana for about 20 years. My mother-in-law taught me how to make gumbo. About 3 years ago we moved to North Carolina. I still make it every winter. My daughter's best friend wasn't too sure about it at first. Now she can't wait for winter so I can make it again. I definitely miss the good food from there

I’m a 6 generation native Texan and it takes me all day to make my gumbo. I’ve been craving it all week and hear you are making it. ❤ I make my roux almost black! It takes 45 minutes just to make that. 😂 I want shrimp, crab, crawfish and chicken in mine.

I lived in Louisiana for 25 years. I still make my gumbo. My daughters still live there. I buy lots of Cajun sausage to bring back when I visit them.

You should freeze dry your pumpkin and powder it. No waiting for it to drain and you get the consistency you want!

The last time I purchase butter there was no limit on how much you could get so I bought a case of 36 for $1.71 lb. Placed it in the freezer. I have gee in the pantry.

If I ask my husband or son what birthday dinner the shout is GUMBO, yes it's an act of love. I now make enough to freeze leaving out the shrimp and okra. I add that when needed. Thanks for showing another way to make gumbo,there are as many ways as households.

OH Rachel I had homemade Gumbo in New Orleans when I visited a friend about 40 yrs ago. It was fabulous & made so traditionally. I call the colour a Copper Penny colour & yes I remember penny's :) Great Video Rachel LOVED IT !!!!! Cheers Denise- Australia

I freeze dry my pumpkin then powder it. When I'm ready to use I just need to add the milk, honey, spiced and eggs and bake. Extremely easy.

Oh yeah, love gumbo. I’m making some next weekend. I use rotisserie chickens and then boil the bones and skin for the stock. Makes and amazing gumbo. My son is at university and when he comes home, that’s what he wants so I keep servings in the freezer for him at all times. He’ll even eat it in the summer ;). Your grand baby is beautiful!
