Today we're making garden fresh BBQ Sauce! We'll start by making up a HUGE batch of sauce & get the flavored just right. Then we'll split it off into 1/3 portions and turn two of those into something extra special!
BASE Recipe
---------------
3 C Onions
1 C Molasses
2 C Honey
1/3 C Worcestershire
3 Tbsp Mustard Powder
3 Tbsp Garlic Powder
1/2 Pint Cowboy Candy ( • THE COWGIRL CANDY CANN... )
3 Tbsp Nutmeg
2 C Vinegar
1/3 C Lemon Juice
Dash of Liquid Smoke
Split BASE into 1/3 Portions
---------------
(1) Stays plain
(1) Add 1 pint Cherry Juice ( • Do You Steam Juice? | ... )
(1) Add 1/2 pint Mustard Butter ( • HOT PEPPER MUSTARD BUT... )
Process the jars in a boiling-water bath for 35 minutes for pints and 40 minutes for quarts.

The reason too much headspace is bad is because the processing time to push all the air out is based on the headspace more headspace = more air = it may not all push out = risk. Love your recipes!

Just a tip - (I have a Victorio also.) If you heat your tomatoes up for a few minutes before running them through the strainer it gets the pulp off better so you don't have to put the tomatoes through twice.

I was just going to ask if these were raw tomatoes. I wholeheartedly agree it’s easier to push them through once they’re partially cooked.

@@starfarms664 oh yes I bet it would really help to just heat to thaw them but if you thaw them over night to where they are not crunchy I bet it would go right through the victoro easy. Frozen tomatoes turn to mush once thawed. At least mine do

That’s what we always did with ours. We put the giant canning pot on the stove with the burner on low and started quartering tomatoes into it. Once they got good and hot we would run them through the strainer.

You guys are so talented. Hubby has been helping me with canning. I'm 61 and have had several dizzy spells and falls, not good. He such a trooper at 74, still works full time as a heavy equip. tech for the state of AZ. TFS

Rachel, I look at you with that sweatshirt on and I am so jealous! I cannot wait for some cooler weather. It is so hot and muggy here in the Mid Atlantic! We have been getting the dreads from tropical storms and even the rain is hot. 🥵

I loved my Victorio, made quick work of processing our tomatoes. We oven roasted our tomatoes and this machine blew through all the peels and seeds in record time. Thanks for the video!

I love watching you both work together. He is such a big help for you. I can see by what you have on the table, that you have a lot of work ahead. My garden got started a little later and I don't have as much as you so I have more of a break in between, I didn't get as many tomatoes planted this year as last so that will limit on what I get to actually make with my tomatoes. Next month will be busy when I get to finally harvest my sweet potatoes.

Rachel....you inspire me...I made some red pepper relish today with my thrift store food ninja...the same store had an 18 quart roaster for 6 bucks...I grabbed it up and can't wait to.slow cook my tomatoes...I don't have as many as you...but...I had to have the roaster like yours!!!!..you and Todd are awesome!!!

Guys they sell a motor that you can attach to that unit. Also it works much better if your tomatoes are cooked. I know at this point it’s too late for that. But that’s the best way I have found to use that unit. So glad you’re doing a barbecue sauce video I’ll be making it soon.

So many wonderful ideas! This was our first year gardening and after seeing all you’ve done with tomatoes, I’m ramping up the number of tomatoes we plant next year.

There is no such thing as too many tomatoes. I had a lot of "left over" plants after planting up my polytunnel 26ft x 60 ft (hoop house) that I put into a new outdoor garden bed, and they are actually doing really well too, and everything out there is a bonus. All three BBQ sauces sound phenomenal, decisions, decisions!

Long time watcher, have always wanted to comment and say hi, but now I have something maybe helpful to add. For other years when you don't have bumper crops of tomatoes, you'll have to try rhubarb BBQ sauce if you haven't yet. I tried a recipe from one acre homestead (on KZbin) and it is so good. And up north rhubarb is way easier to grow than tomatoes! I'm growing in Alaska and trying to maximize my 90 day growing season, and one way I'm doing that is by trying to focus on things that actually want to grow up here. I love seeing all the things you do, you inspire me!

One day we Southerners will turn America on to Alabama White BBQ sauce. Its the best on smoked chicken! For a tomato based sauce, try adding some pineapple marmalade, brown sugar and a little soy sauce. You wont regret it

I use an attachment on my Kitchen Aid mixer that does this so well. And no hand cranking!

My tomatillos are so prolific this year. What do you think about a tomatillo/green tomato bbq sauce? I mean it will still have the vinegar so it should be fine to water bath or pressure can, right?

I have 2 Victorious. I love them. Yours doesn't have a guard around the funnel. I can imagine that is messy. I always thought you had to cook the tomatoes. I have never run through raw. I will try that. Girl you need steam canners. They are so much faster. U of WI proved their safety. I got 2 this summer at Fleet Farm and don't think I will ever use my water bath canner again. Thanks for the base recipe. I like to add rhubarb jam to my BBQ sauce. You got a good harvest.

This video made me think of your video making apple cider vinegar. Which inspired me to do. And inspired me to learn to also make... cranberry, blackberry, blueberry, and raisin vinegars. So since you put vinegar and cherry juice in.... maybe think of making a Double Cherry by making some cherry vinegar? The black and blue berry vinegars were suggested to go in BBQ sauces. Just a thought. My friends call me a mad scientist... brewing, canning and dehydrating, etc. It is all science? right?

Looks so yum but I’d be scared to run that burner that close to the house or on a wooden deck. Down south those burners go out under a big shade tree. Glad you had a bumper crop! I hardly got anything to grow this year. Working on more compost and hoping my fall garden does better. Thanks for sharing!

I'm glad to see someone else measures like I do. 😄If you don't have a full jar and there's a large amount of air space in the jar, you run the risk of seal failure down the road. I just did bone broth and had 2 quarts, ham & chicken, that didn't completely fill the jars for the required headspace. I put those jars at the front of the rest of the bone broth in the pantry to use up right away. Just a thought, I don't know if you realize you can use your pressure canner as a steam canner. I've done several videos on this method. Use the required 2 inches of water in the bottom of your AA canner, double or triple stack your jars, precede as if you're going to pressure can and bring the canner up to vent. Once you've reached the point of venting, start your "water bath" time and allow it to vent for that period of time. So if you plan on water bath canning for 20 minutes, allow the steam to vent for 20 minutes and then turn your heat off and allow the canner to cool enough where no more steam comes from the vent pipe. Remove the lid and take your jars out. Saves you from filling the canner up with water. It's nice to see that you are set up to can outdoors as well. I do mine in the garage during summer months. And it's nice when you don't have power. I'm having fun watching you both, and yes, I'm a sub. You work well as a team! Have a wonderful day!

My 2 favorite all time BBQ sauce canning recipes were Apple Butter Fire Ball , and Peach Habenero Bourbon. Followed by a sweet hot Plum BBQ sauce. All delicious and using what I had. I don't drink hard alcohol, but had some odds and ends here at the house. Great way to use them up. And the sauces were complex and delicious

I'm getting ready to make peach BBQ sauce. I made peach pie filling and I still have a bunch left over. Using the drill is a smart idea! I broke down and bought the motor attachment for mine. :)

I was inspired by this recipe and I made it today. I had 7 quarts of tomatoes so I adjusted the amounts, I assumed your large canner held 16 to 20 quarts, I used a combination of honey and brown sugar and 1/4 cup seeded habanero peppers instead of cowboy candy. (Wow - that was enough!). It turned out great! Thanks for your ideas!

Adding to my recipe list. Unfortunately I'll have to buy tomatoes at the farmer's market to do so. I've been in and out of the hospital with my little girl the last one and half month. Nobody at home to water the garden. So my tomatoes are dying and have diseases. Frustrating after so much work.

I have white westies and usually when I'm using my mill they end up with a red dot on top of their heads from cleaning the floor as I'm processing. LOL I've used the same mill for years and it's quite a work out. I've never thought to hook up the drill do it. This year I purchased a large electric mill for myself and I can't wait to use it. I do make quite a bit of tomato juice, but now will be putting up some bbq sauce too. Oh, and I did score a bread machine on a sale page to help me save time making my bread too. Today at the thrift store I bought a roaster and a stick blender for processing my tomatoes into chili sauce and other sauces. Yum the bbq sauce looks yummy. Thanks for all the ideas. I can do it!!

Great recipe ideas for barbeque sauces. Right now I have loaded tomato plants just hoping they ripen before frost hit. Never really know in Colorado. If all goes well I'll be making salsa. Happy for your tomato harvest. Love your channel.

Thanks for sharing! When I can outside I also put my jars into the cardboard boxes... But I lay down a tea towel or some paper towel in the bottom of the box first. I like to reuse my boxes for storage and I know you do too. I was worried if they got too wet, they'd breakdown sooner.

Hmmm- whatever works but I always thought the wide part of the plunger went down - it fits the funnel opening perfectly. I think it pushes the tomatoes through better. Anyway - nice video. Thanks for reminding me about the tomato powder - I forgot that tip.

Bbq sauce looks so yummy! 😋Hope you guy's get power to stay on soon. The outdoor stove is a great idea. On my list to get along with a generator.

That sauce is beautiful. I’m having trouble keeping up with everything right now with a harvest in full swing. Good problem to have though. I just started some tomatoes to make this sauce. Thanks for the info and the great idea. So excited try the cherry one. Happy canning.

Turn the plunger over and hold the skinny end and force the large end into the hole at the bottom.

I love my victorio strainer and bought a electronic adapter for it but I love this version because the newer ones are more plastic spout.

If when loading the hopper almost full of tomatoes then turning handle the tomatoes feed themselves all the way down with pushing them slightly. You certainly got much juice! I always feed my through a few times also, surprising how much more juice you can get

I use rosemary pesto to my base so good to put in baked beans.

I have loved my Victoria for easily 30 years when I happened upon 3 older siblings selling their 4th siblings Victoria at a garage sale because she had recently passed. They had to tell me what it was and how to use it and I had to run and very my husband to confirm this needed to be ours. I have made a lot of applesauce and tomatoes everything with friends and also loaned it out after they learned I had this and how wonderful it works. I have always cooked my tomatoes first so that the skins and top would be clean. Was there a reason for doing it raw? Love to watch all your videos. Love that your in my home state of Michigan!

There is an apple butter bbq sauce we love but it's impossible to find, MIGHT need to make some. I picked up one of the Victorio food mills for this year, just waiting for it to arrive.

I cook my tomatoes until soft and then put them through the food mill. It turns MUCH easier and faster. You can put veggies in and they get soft and go through easily, too.
