Unless the V5 states 'non-transferable' you could fill in a V317 form and transfer the number plate to another vehicle or onto a retention certificate. The DVLA will then issue you with an age related (1961) replacement number for the ambulance. I've done this myself. It would be easiest to wait until it's restored as I expect they would ask for it to be MOT tested even though it's exempt.
