Java Jim, try this extraction for 20 grams in, 42 grams out, using a scale underneath the cup. Turn off auto preinfusion. Preinfuse at 2 bar for 30 seconds (let the drips fall if they do). Then 9 bar until 20 grams in the cup. Decrease to 8 bar until 30 grams hit. Decrease to 7 bar for 6 grams. Decrease to 6 bar for 6 grams. Enjoy.

What's the breakdown is the time at each pressure? Couldn't really follow the gauge but sounded like alot of time at 2bar to start and to end

What is “5 second pre-infusion, 3 second soak”? Is this programmed in? Can it be changed?

Among other features, the Binaca has "electronic programmable preinfusion". Using the Lelit Control Center (LCC) you can program how long the pump initially turns on to wet the puck before it turns off. In the case of this video he has it programmed to run for 5 second to pre-infuse (wet the puck) then the pump shuts off for 3 seconds (to give the puck time to soak up the water that that was dispensed during the 5 second pre-infuse state.) After 3 seconds the pump turns on again and continues to run until you stop the shot. Yes, you change both of the preinfusion time cycles as you see fit, either one can be set anywhere between 1 and 20 seconds. FYI: You also have the option to turn off the automatic preinfusion entirely in case you would rather use the paddle and do it manually. Your tamping is absolute pathetic. Coffee was too loose. Btw, I do 1:17 (77 seconds) shot for very light profile on cheapest espresso machine. My grind is almost Turkish. Best ever tasting ristroto shot I get like that. Super creamy and intense taste
