Take it from Indian, first fry garlic for a min, then add onion until light brown, and then only after the onion is cooked do u add the tomatoes, then let it cook until there is a golden shimmer on the surface, then add spices after raw tomatoes taste is gone, then water and chicken. And then enjoy. In spices, add garam masala, red chilli powder 1 tsp, turmeric powder1/2 tsp. Add peas after spices. For richness, use fresh cream, not coconut milk.

garam masala is a roasted spice. You don't need to saute it. Try adding it just after you add the coconut milk. The curry will taste better and have a beautiful aroma. Edit- I am from west bengal, India. The garam masala we get here is already toasted. If we try to saute it in oil with other spices, by the time the other spices get cooked, the garam masala will be burnt.

@@stephanieann6622 It was specified. $2.75/PORTION. Why would he say portion? Because the dish makes more than 1 portion.

In India the traditional chicken curry we make, we don't use tomato puree instead we use whole sliced tomatoes and we don't use garam masala instead we use all the raw ingredients used to make garam masala. And lastly when a thicc curry mixture is ready we coat it in raw chicken and let it cook for a while closing lid and then pour water and let it simmer.

Where I am, the only good tomatoes are ones you grow yourself, and they’re not in season right now. Canned is the only adequate option if you can’t get fresh. Everyone I know hates tomatoes because the only ones you can buy here are absolute garbage. I love tomatoes, and I didn’t understand the hate some people have for them until I moved and tried them here. Now I understand.

@@emilyb3875 Idk but I live in India and i can get fresh tomatoes from the nearby shop for like $0.5 Per kilo . Also i think making fresh is better ¯\_(ツ)_/¯

@@krishangbhatt964 Lived with an Indian family abroad for some time. I was surprised to see that they use canned tomatoes instead of fresh ones. The explained that it is much cheaper.

A friendly tip: Instead of using garam masala at the beginning use turmeric coriander and cumin powder if available and sprinkle some garam masala at the end just a couple minutes before finishing.
