On top of the advice I've seen in the comments, one thing that really helped me is to keep in mind WHERE you dodge, and not just WHEN. If you roll backwards, there's a chance you can still get hit from some attacks, but for instance if you roll to the left when an enemy swings to the right, that decreases the chance you get hit if you mistime a dodge. In general, you want to dodge into enemies rather than away from them so you can punish them more quickly. You started doing that toward the end of this fight so I think you kind of realized it can be successful.

Roll into him and when he whips his tail you roll and then jump for his second tail whip attack
