I despised ALL vegetables until the age of 13/14 (I don't know how I survived that long, tbh). I became a vegetarian at that point and started to cook more for myself and naturally incorporated more veggies (still not much though) into my meals. Not long after that - as I learnt more about the food & animal industry - I found myself experimenting with vegan cooking and really started to appreciate and love vegetables (I became fully vegan when I was 20 yrs old).

In the same boat. Sometimes I'll be able to power through and make a batch of something (especially if most of it is oven time and a lot of inactivity) and I could cry because it's so nice to be able to actually cook now and again. The things I took for granted when I was healthy...some day when I have maybe improved my symptoms I will regularly cook healthy meals. Can't wait 😁.

Same here, I really appreciate this video. On rough days, if I even cook, I can be too tired to eat once I'm done cooking. Sheet pan cooking gives me a break in between, which is so great.

I agree with you! I also use as many pre chopped ingredients as I can, like frozen onion, frozen peppers, garlic.....microwave rice....anything to reduce energy output needed! Definitely need to make this soon

I have all the ingredients for the first pan recipe, except snap peas. I'll add some cut green bell pepper toward the last few minutes of baking (to minimize moisture, letting the tofu crisp better). Hey Andrew, I can live with your judgement re: using store bought sauces. ( I hope you hear the lol!) It makes my life a lot easier. I do make sure they are "clean". I always keep teriyaki, BBQ, mayo, Kung Pao & Gochujang. I keep a "red hot" type sauce also so I can make my own Wing sauce. I'm totally simpatico on the soy curls, LOVE 'EM!

I love homemade teriyaki sauce and it is just the best with tofu prepared like that - the "skin" that forms around the cubes absorbs the sauce and makes it all incredibly delicious. It is the only way my non-vegan fam accepts tofu at all :D

I didn't like soy curls at first. I would rehydrate, squeeze, rinse, squeeze rinse repeatedly and then marinate them for at least 24 hours. Now I rarely even squeeze them. I rehydrate them with just enough marinade like in this recipe and think they're delicious!!

I just wish you would use a bigger cutting board but I do realize they can cost an arm and a leg for one good one, but I'm glad you are not using glass or plastic. You have said that you are a home cook, "Just curious" did you ever think about opening a restaurant? I would be there daily! 👍🏾

I use mirin in many dishes…asian flavoring is always an easy way to doll up the vegis and TOFU! You can use it Italian food to take the bite out of an acidic dish. It can be used in a dressing too…

I'd suggest to replace the olive oil in the first recipe with rapeseed oil, if you want it healthier. Rapeseed oil has a way better omega-3 to omega-6 ratio. If you want the flavor of olive oil then i'd sprinkle a bit on top at the very end.

"Dried spices are more potent than the fresh stuff" Nard, brother, I know what you mean here but I think it might not have come out right. The flavor difference between fresh ginger and ground ginger are pretty extreme. Same for fresh garlic versus garlic powder. Ginger and garlic powder have their place in the kitchen, for sure, but fresh ginger and fresh garlic taste completely different than their ground versions. I know you know that but I think that sentence probably triggered a lot of garlic lovers like myself 😅 Thanks for doing your thing and sharing this great content with us.

Yes. thank you for helping clean that up for me! The line was to refer more to cooking and how to swap dried for fresh. Dried herbs being dried and crushed this helps concentrate their flavor (hence the more potent reference). With fresh having more water, facts are they are not as strong when it comes to seasoning. It was all to say, If you're making a swap, use less dried herbs than you would fresh (or vice versa). Although, i completely agree with you, fresh herbs "hit" completely different! Appreciate ya! ❤️

As soon as I saw your tofu selection for the first recipe, I was sold. I've never seen those tofu curls before, but I will have to check them out. I personally do not follow a vegan or vegetarian diet, though I would like to consume less over all flesh.
