What he does is rare. I’ve got all the respect for the craft of butchery. I know of and know many small direct market livestock farms and farmers in my region, and only one does butchery. Abattoir packing is definitely the meta here, but we’re all leaving money on the table. The guy that makes his pigs into charcuterie definitely makes more money per animal and per hour then wholesaling or even direct marketing packed cuts I’d say.

When I was a kid nearly 50 years ago now, my parents used to buy from neighbours 4 Jacob crossed with a coloured sweedish sheep whole carcasses, they were about 30lbs at the most. Great fun watching my Dad " dismantle " them. It would be great to see.

That motor sounds super happy. I don’t get why you hate on your truck so hard. Where I live we run them until we run out of body or frame. Give it a little lovin and it’ll keep taking care of ya. I’ve got 233k miles on my 02 Toyota and have replaced everything I can possibly break besides drive train components & im still less then half into that truck compared to what it would cost to replace it with a decent used one and 1/7th the price of a new truck which would be loaded with screens and electronic garbage & would never give me the reliability of my borderline antique.
