My grandfather always had a ham hanging. He would cut a piece off and kept it hanging until it was all gone. It was so good. Blessings to the family

We bought a female pig to butcher and ended up keeping her and breeding her (hopefully). You've got to say they are for butchering.

You will love the kune kune especially for rendering the fat..Also the fat for making sausage with other meats.. We do a small 4 month old every year over an open fire with a rotisserie as celebration with family and friends for the New Years harvest. then grow out the others two years for the lard yield.. They are much easier to butcher right on the farm. Not to mention they are just such a fun breed.

The little Kuni Kuni pigs are so cute! We are in the desert and we don't hardly have any grass. We get weeds with the monsoons.

When that time comes for the piglets…make sure they have a name so you can praise how well they taste. “Petunia and Wilber taste so good”. When my sister in AK told me that I was horrified but the more I thought of it, it made sense to praise the animal that gave its life but always be thankful for your lord as well.

As a fellow Croatian based in Sydney Australia, we cover the leg with Paprika also and smoke the hell out of it with sausages for at least 5 months... don't forget humidity kills it pardon the punt.... so in the kitchen is not a good place temperature has to be consistent...love the videos keep up the great work wishing you all well from the other side of the world. xxxxx

You should dig some Berm and Swales on your land to hold some water for the grass.

As a child on the farm we never had an issue eating our livestock. We knew that is what fed us and never questioned it. I the Billy the bull (black Angus) was the most we discussed over the dinner table. He charged daddy one time, then went to the processor. Daddy didn't play around with the eight of us children on the farm. Safety was a priority. We did name the farm animals but never because a pet. Daddy did respect them. I saw him cry when the calf he tried to save died. You are doing a great job on the homestead. 😊

Yeah, you need a pond where the water pools. Maybe terris (sp) the land to hold more water. I know you are just getting to know your land but its telling you what to do. Love those piglets. Food or no food it doesn't matter to me. I love them all the same.

I make prosciutto all the time...18 to 24 months and it's usually ready....at 3 years you will need a chain saw to cut it and steel molars to chew it

Give the turkeys some duck feed. Their legs might improve. They lack some type of nutrient.

We love canned chicken. Very tender and so full of flavor. Prefer it canned over frozen. Excellent 'fast food", it's shelf ready.

Somebody can correct me if I'm wrong, but I think turkeys need feed with at least 18% protein. Not saying that you don't. Trying to figure out why your turkeys are having a hard time.

In Spain we have little cones with a hook you put on the lowest part of the hanging han so any dropping goes inside of it and your floors are clear.

Might consider one pig for the canner 😊 love to you all ❤ (chile verde, pazole, Indian curry rice & pork) saves cooking time when using canned, I process some this way 😋

I was shocked how attached I found myself getting to the pigs we raised last year, I cried on processing day! Death isn’t easy, but I’m so thankful for the fresh healthy meat for my family!! 😁💗

we process our kunes at 14-18 months, and winch them out of their skin rather than scraping them. GREAT for ham and bacon! - Dana

Wild blackberries are much sweeter than the tame ones. My momma who is 89 (July 10) makes the best blackberry jelly. Absolutely love watching you and your family. I also live in North Carolina. I’m in the foothills below Boone. We had about 9 inches of rain. I live at W.Kerr Scott dam. And it is way up. They are letting the water off some now, but the Yadkin river is muddy

That dog fennel is vile stuff. When I was a kid in South Florida, there would be patches of it near where we lived that would get four or five feet tall. If you walked into it, it would completely shut off any air movement and the stalks would be covered in love bugs!

Living Traditions just got a different breed of geese that have a better temperment and they got sexed geese. I just saw the video yesterday and I cant remember the breed. I get what you say about the piglets but its better for them to be social. I know I would be attached but like you its a blessing from God to have His provisions.

I eat chicken leg 🍗 in the restaurant on the island and and was suprised that was so tough . Waiter told me that there is not much grass around so chickens wonder off and look for bugs and climb shrubs and such . So they grew muscles 💪 🐔 now that's free-rangeing chicken 🐔 😅

I love how much you care about the animals in your care, those poor turkeys, have you thought about contacting white house on the hill to see if there is anything you can do to correct the legs. I know this is a totally different thing but my cat had a kitten that was born with a double talapies in his back legs, it was right in the middle of covid and unless you had an animal that was dying, you couldn't get a vet appointment, so I used some wooden coffee stirrers, broke them to the size of the kittens legs and basically set the legs in the correct position with sticky plasters, I did this twice with 5 days apart and he is now nearly 2 years old full of life, he can jump and is a normal cat. As the turkeys are still young you might be able to keep the ones with poorly legs on their own so they can get to the feed and you might try seeing if you can just correct their legs. The little piggies are growing well and look so cute and I think when their time comes for freezer camp you will find it harder because they are the first baby piggies you have raised. We switched over to the Cornish cross roasters ... They have stronger legs and seem to be more healthy . They don't die so quick

I had leg problems with my Turkeys (same breed as yours) last year and ended losing half . (I did have one with a bad leg that grew to 15lbs but was picked on by the others). This year I bought 15..only wanting 7 …and they all lived and are now 9 weeks old. 😂😂😂. Searching for new homes for some of them. Good luck

Jason, hands down the best flavor pork comes from the Mangalica pigs originally from Hungary. Back in the 60's thru the 90's my family raised these

The ham reminds me of our cured meats attempts. We made bacon and an Italian style ham (though things happened and it stayed in the salt longer than ideal) we still haven't finished them. We started making them in 2016 or 2017. Very hard but still a great flavour pop in various dishes. Had them in our pantry until the end of last summer when we moved. It is crazy to think about the meat still being edible 🤔😆

I didn't know it was called dog fennel. I thought of it as chigger weed. Chiggers were always on it when I was growing up.

They wont yield that much so you may find 4 is not too many. Just alot to harvest at one time. But you can still spread that out. Save the females as the last to kill. Should you find you dont need it you could try to sell it as a breeder at that time.

That Prosciutto looks amazing. Supposed to be hard and you slice it like super thin. Supposed to be able to read through it. I want to try it when we butcher this year.

It’s funny that you mentioned the fennel as something the animals don’t like. My pigs don’t eat it either but our rabbits go CRAZY foe it. It’s one of their favorites. We have rabbit tractors.

Are you feeding them 28-30 percent protein feed? I lost a few the same way before I discovered that they needed higher protein. (Turkey need it for 10 weeks).

I raised the white broad breasted turkeys last year, and this year we are raising the bronze breasted turkeys. As far as I can tell the growth rates are pretty similar with the same amount of feed. We've only lost one due to a predator, so I'm not sure what's going on in your area.

Don’t Blackberries grow wild in California? I live in Southern Oregon and we have an over abundance of wild blackberries. They are invasive here and the roots pop up new growth all over. For some reason I thought it would be similar in California.

I hope the new legislation will allow you to cure, honey glaze, spiral cut and ship 2 yr old hams. Let more pigs clear the woods and your neighbors as rental. You should auction one on abundance plus.

I watched a woman take a chicken with those weak legs and she put a splint on the bad leg and a cross brace above the knee and it worked well.

After a year the ham is good to go, after that the quality starts to go down. But i would ask around and make sure.
