"In time for her nightly soaps???" More like a quick and easy dinner for a woman who has worked all day and then faced an evening of cooking, cleaning, homework, getting the kids bathed and in bed, and more. As a single Mom of four small childre in the 1970s I knew that drill well. Sometimes days went by before I even got a chance to watch any television at all.

Why do I watch these videos?? They always include stuff we all eat regularly. OK maybe I'm picking up a store made pot pie vs making my own sometimes, but that is indicative of life today. We are rushing and tired and grabbing food. Although I try to cook more than grab. And other than the corn casserole (which was never super popular up North, but I still enjoy a variation of it a few times a year), I make most of these. I really think the point is so we all comment that we still make them LOL. Been there for the forgotten desserts I still make, the forgotten sandwiches, etc.

My husband and I were talking about the tuna noodle casserole just last night.. and I wondered if they had white tuna on store shelves back in the 50’s.. or in our case, the 60’s. I keep trying to get my husband to take even just a little courtesy bite of a white tuna sandwich or a salad but he refuses! His mom over did it with the tuna casserole as a child and his dad had a thing for hominy and my hubby won’t go near either one of those food now. I am forever telling him that we have better options now in the canned tuna department but he doesn’t care, he has no desire to try it. His mom ruined his tuna experience. 😂 And I agree with the majority here, who says we don’t make these casserole’s anymore!!

I had Shepherd's Pie two days ago at Cracker Barrel. I live in Texas and I'd never heard of Mexican Egg Casserole. I'll have to try it this weekend. I thought at first that was Enchilada Casserole until I saw it was coming later in the video. I made Enchilada Casserole in 8th grade Home Ec class. Baked spaghetti and chicken spaghetti were staples at our church potlucks. Cheddar's used to serve baked spaghetti. My wife makes both stuffed poblano peppers and poblano pepper casserole. I could eat beef and noodle casserole and Hamber Helper every day and twice on Sunday. I loved the Cheeseburger one while my dad favored Chili Macaroni. Sometimes I'll ask my wife to make the Chili Macaroni one in remembrance of him. (So clearly it's still around).

Tuna casserole is still around, most people just don't know how to cook anymore. And you need tuna in oil for the flavor. I'll stick with my poor man's shepherd's pie, made in a deep dish pie shell with corned beef hash mixed with a can of mixed vegetables and dark gravy topped with mashed potatoes. I made scalloped potato casserole with chunks of spam last week. All the enchilada casseroles I've ever had used a thin layer of cornbread on the bottom and top with the filling between and topped with cheese. The best Mac and cheese I've ever had was on a Roach Coach that visited the jobsite. It had a lightly diced mix of jalapeno peppers mixed in. Why do people keep calling tex-mex food authentic Mexican? Prime example - the Taco Bell garbage. NOT MEXICAN, everything wrong. I prefer my stuffed peppers simmered in a pot of spaghetti sauce with 1lb rice meatballs in the peppers. My wife's home economics education consisted of nothing more than casseroles made of leftovers, canned cream soups and topped with corn flakes cereal with cheese on top. We haven't allowed her to cook for the last 30 years.

You didn't eat tuna noodle casserole at restaurants. You ate it at home. It was a Friday night staple in pre-Vatican II times, when Fridays were days of abstinence. I'd rather have Jiffy corn casserole. Green Bean casserole is made from French cut green beans, Campbell's chicken of mushroom soup, & French's fried onions. Just hamburger, not hamburgers. It's not a casserole, it's just baked macaroni and cheese

I've been making tuna casserole (with rice), scalloped potatoes, zucchini casserole, stuffed peppers (with mideastern seasoning) and macaroni and cheese for 58 years. I also invented an egg Florentine casserole---with noodles, spinach, hard boiled eggs and a cheese and cream sauce. I also have a casserole recipe from a 1960's called "Potato Pan Burger". It's seasoned ground beef seasoned like beef Stroganoff with mashed potatoes on top. I'll NEVER stop making casseroles---especially in the winter. I don't like broccoli, so I don't use it in casseroles.

And I **still** love scalloped and/or au gratin potatoes "casserole" ... same with stuffed peppers (not sure if I'd consider them a casserole, though ... I mean you can use a casserole dish to cook them however they aren't the looks/style of a traditional casserole). If you, dear video makers, don't eat tuna noodle casserole, that's your issue, not a "we" issue. My local supermarket sells chicken pot pies that look exactly like those shown here -- and has a whole freezer section of pot pies. Corn pudding is Southern; if it were Southwestern, corn would grow in the Southwest and the pudding would contain green chiles. And with that, my viewing ends, because I'm not finding a whole lotta truth in this vid.
