Guys, finally I had the time to make this video that makes the third of the full holy trinity in my BBQ carrier . Ribs, Pulled Pork have all been there and NOW I could get a fantastic piece of meat from a farm in Haag/ lower Austria "Wagyuhof.com". That brisket was actually as expensive as my Weber Smokey Mountina 18 inch water smoker. So many times I thought if I should invest in a pellet grill or some fancy new bbq but hey from what I can tell you now after I smoked this piece of meat - INVEST IN MEAT not in a BBQ :) This specific brisket was so incredibly tender and juicy after a 9 hour smoke and a one hour rest in an insulated bag - just phenomenal!

It makes dialing in the WSM just so easy and fun to use - you can even swap between temperature ranges - I love it!
I used the "Meater plus" temperature probe to control the core and oven temperature:

I used a simple Inkbird BT probe for controling the edges of the WSM that get usually quite hot from the burner below:
