Will it hurt the differential to use regular 75-90w hypoid gear oil?

That's an excellent question on most Vehicles you want to change the fluids every 3 years 30 to 60,000 miles depending on driving conditions if you live somewhere extremely mild you can possibly go 5 years just depends on the way you're driving it

I think it depends on where the oil drain plug is that's why I always use a regular Jack and I usually Jack it up so it tips the way of the oil plug.. That allows a little bit more oil to come out but at the end of the day it's not a big deal even if you left a half a quart of oil it won't hurt anything
