You can disassemble, grease and reassemble the wheelhubs and the the bearing in the stem. The chain won't be a problem if cleaned and properly greased. The only part that might cause trouble is the bottom bracket.

I’ve done some rocky river crossings and I’d say don’t downshift too far you would not have enough momentum - just far enough you can keep a good cadence. I’m sure clips would help a lot - but I just use school flats. I could imagine some funny scenarios not being able to unclip 😂
