I have some people I know in the players cup tournament(the actual tournament not the invite one your watching right now). The answer to that is the players have a team sheet which will show the pokemon's items. Therefore making frisk redundant :)

For EV training, does it matter if you level up the pokemon to level 100? I have pokemon that are max EV trained and are under level 100. Do i have to level them up to 100 for the EVs to take effect? Im going to use them for online battles and the battle tower

No, it takes effect immediately. If you use a HP up, you immediately see the effects whether on level 5, 50, or 100. It's scaled to level 50 anyways at battle tower so it doesn't really matter.

You guys think all these pro trainers are actually spending hours just building and even more hours making minor changes to their teams? Are you supposed to build a team that's gonna make it through the whole tournament or just through a single battle? I'm really not seeing how it's feasible to breed and train up enough pokemon to even play competitively more frequently than you're tweaking stats and move sets. ShowDown seems like it would be the end for most people trying to actually play competitively without messing around with all the tedium associated with building out those teams in the official game.

Generally you create one team for the tournament however this affects only your Pokémon ( you can change the movesets). Breeding isn't the fastest thing to do but a lot of players breed one Pokémon and then they change its EVs and movesets according to the team they have in mind. In the end there are other things that help with competitive team building such as the EV training glitch with poke jobs. P.S: hope you find this a bit helpful!!
