How is the Apple maps for navigation? Basically, I’m looking to use as a rental car abroad; so Nav needs to be accurate and easy as possible

I would use Google Maps on the iPhone and not rely on Apple maps outside of the USA, as it just isn't as accurate and will almost certainly give you longer routes.

Hi. Is it possible to turn off the touch screen for night driving?

You can adjust the brightness and it should go to a dark colour scheme at night. You may be able to turn off the screen by reducing brightness but unfortunately all new cars use the main display and it has to be on unless you don’t want radio and music. In which case you can’t turn it off.

I don't have the car in front of me to explain the exact steps but I would suggest you go into settings and it should say "units" or something similar.

No; CD/DVD are not supported. Your music will either have to be on your phone/streamed or on a USB stick/SD card (with a USB adaptor).

You would need a USB stick with photos on it to do that; personally I don't think it is worth it but that is how you would do it.

Do you have Android Auto or CarPlay? I would try that first, but unfortunately you cannot upgrade officially. You may be able to find a third-party method.
