The perfect meal! Thick cut, 21-day dry-aged beef rump served with garlic and parsley chips. Not even the rainy and windy weather could stop us from making and enjoying this delicious feast!
Recipe
∙ 3 kg Beef rump aged for 21 days @ 2°C
∙ about 1 kg rock salt for dry aging
∙ 5 Potatoes
∙ 1 tablespoon minced fresh garlic
∙ 1 tablespoon chopped parsley
∙ Salt and pepper

Hi Reinhardt. My rede vir die afsny in maar net die tekstuur. Bietjie hard, maar die smaak is net soos biltong wat sout kort. Gaan 'n heerlike potjie nog maak met die afgesnyde stukke.

man,i just finished breakfast again,and everytime you upload,ive just eaten. and guess what? im hungry again!!! i have a large piece of Picanha that i have dry brined last night. leaving it for 24 hours and on the coals tonight. meskien moet jy dit probeer? ek hou van Picanha,wel enige steaks,maars dit is lekker ook. ek is n kleurlinge outjie,maar ek hou van " Boere" kos. en baie dankie vir die "egg tray tip for fighlighter". werk 100% . en ook die chillie sauce,ek gaan dit maak een van die dae volgende maand,ek hou van "holbrand" chillies.ek kannie wag vir die volgende video nie. stay safe to you and the family.

@@WolkbergArtisans2019 baie baie dankie. ek wag nou al vir die volgende een. ek moet se,die een ding uit die COVID tyd wat goed was, dat ek het meer kos gemaak. soos dit nou stan,is my hoender Kerrie,amper reg,al vra die familie nou dat ek sal the hoender kerrie van nou af maak in onse familie ,so ek reken dis maar ok. en van die Kaap af,wel ons hou van onse Kerrie. eenigeste ding is dat ek kan dit nie sterk genoeg maak nie omdat die res kannie te sterk kos eet nie. sal maar my eie net vir my maak volgende tyd. baie dankie vir jou "reply". tot die volgende vid.......

Rump is a pretty tough cut. Does aging soften it up at all?

Hi Greg! Absolutely! You can see on the video the that touching the meat creates dimples. Not as tender as fillet(Tenderloin), but definitely tender with aging.
