Wiktionary says かたい was originally derived from the old Japanese 堅い which means "hard". So if a problem is がたい, I suppose it has something to do with the "nature" of the problem. A nutshell that is "hard" is inherently difficult to crack.

Absolutely wonderful lesson! Even though I'm still a beginner, this was very clearly explained. I loved the origen of "arigatou". Would it then be correct to think that "~gatai" isused more for things that seem dangerous? Like maybe "It's impossible to eat this (because the texture is hard to eat)" or "many people die when they hike around these mountain (very hard to hike, easily canfall off the mountain, etc). Like this? Thank you so much for your lesson!

Thank you for watching! "tabe nikui" is when it's hard to actually eat, like the meat is hard and hard to eat, or the cake is hard to eat with chopsticks. "tabe gatai" is used when it's a bit of a waste to eat a cake that looks cute, so I'm a little hesitant to eat it.
