I am another "short timer" Singapore resident - only 3 years and I still miss Singapore - even though it's very different to my home of Scotland. I loved hawker food and once I got over the British "fear" of buying street food from stalls and realised the quality and taste for the money - I was hooked. maxwell was my local hawker place and I had food from there at least a couple of times per week. Loved the video and it's great to see more hawker places being recognised by the Michelin guide. Some of my best food in Singapore was like S$5 or less!

You'd be surprised how many high-end places just use simple ingredients to make their crazy dishes. It's all about the presentation and finding new innovative (and hopefully tasty) ways of showing them off. Sure, you have places with the $800 a pound caviar or the insanely expensive this or that, but most dishes still just use vegetables that we all use, and we all use beef and pork and chicken, right? Even if they get the best of the best in that regard :D

To me, a Michelin star for cheap food means that it’s good food, while a star for expensive food means that the food serves nothing more than a social label of one’s status
@LordLOC
@LordLOC Жыл бұрын
When you go to a high-end restaurant, it's more about the experience than anything else (and of course the food will be delicious and unique normally in these sorts of places) rather than showing off one's social status. At least normally. If you go to a $1500 a plate 5 star restaurant in some super expensive place, yeah that's the status symbol usually. But places like this, much more for the experience. As someone who went to the CIA and was training to become a chef, and worked in restaurants on the line for a while, most of these chefs are smart, dedicated people who love food. And want others to see their "vision" as it were. That being said, I know nothing of this chef - but the food and dishes all look really unique and I'd guess it's an experience thing for that place.
