The problem is, recipes need to not only be delicious, but also streamlined for a commercial kitchen, in order for an establishment to succeed. But Josh's recipes are stupid amounts of work. In the bulk of the content Mythical Kitchen has produced, there’s a workable menu. I’ve personally implemented a few of his items as specials at the restaurants I’ve worked at. It can be done. I have a suggestion for an ingredient. In japan there’s this really fancy and 20 something year aged soy sauce that’s called hatsutosezukuri (廿歳造). It is literally the most pricey soy sauce that is sold in Japan with it being priced at 31.65$ at a mere amount of 1859.771 fl oz, and it is this beautiful dark almost black color. It tastes amazing. I fortunately live in Japan and made raw egg on rice with that soy sauce and it is such a flavor bomb. Dunno if they ship it over to the us tho.
