まっつん aye I’m down for almost anything. Many outsiders forget that America is a huge mixing pot of people from all corners of the world. So I think some are more open to trying new things than we’re given credit for, especially city dwellers since it’s more different cultures packed in. You don’t know how much I crave simple Japanese home cooking sometimes! It’s very well balanced and they don’t waste a lot like here in America. 😭 Honestly, I crave home cooking from many cultures, not from the restaurants or “Americanized”.

Omurice is usually covered with ketchup, not demiglaze. The fried rice usually has ketchup too, or that’s at least the classic version. There are all kinds, and they only stated one, so I’d recommend going around and trying different kinds!

Yakisoba is made using wheat noodles, not buckwheat noodles. "Soba" in Japanese usually means buckwheat noodles, but it can mean any noodles--even ramen noodles, which are sometimes called "chuuka soba" (Chinese noodles).

If you ever visit Sendai (about 300 km north of Tokyo) then I recommend trying out "gyu-tan" which is beef tongue. It's delicious!!

It actually was founded in Fukuoka (my home town) in 1960 and after establishing a strong presence in Kyushu (where tonkostu ramen is the most common kind of ramen), they started branching out all throughout the country in big cities like Tokyo, Kyoto or Osaka. And afterwards they were also able to create branches overseas
