Pro chef Frank Proto from The Institute of Culinary Education and home cook Beth are swapping ingredients and hitting the kitchen. We set Beth up with all of the supplies she’d need to make Chef Frank’s extremely luxe $265 spaghetti and meatballs recipe while sending her more modest $18 worth of ingredients back the other direction. Frank may have gone to culinary school and thats impressive, but Beth literally just watched cooking shows and existed and got right to his level of expertise, a true queen.

@Yeoman Wulf As an analogy it works in this context. Saying someone got to a trained chef's level of expertise by watching cooking shows ignores the training and years of experiece he probably has. I guess a more apt comparison would be shows that explained law by watching a lawyer do stuff on camera and talked the viewer through it, but I'm not sure those are big in the cultural landscape (or even exist?) like cooking shows are

@@qweqweqweqwe40 Beth probably has many years of cooking under her belt. How many years of practicing law at home does the average law and order watcher do? Almost everyone cooks. You can replicate recipes and learn from them and many times reach the same lessons culinary school teaches out of experience, albeit at a much slower pace. This of course completely overlooks that law and order has nothing to do with actual law and is all a bunch of made up nonsense for entertainment's sake. You don't need to get offended and act all weird under a comment in a KZbin section on Frank's behalf lmao. He doesn't seem that fragile so I'm sure he's doing just fine even if people admire Beth's cooking skills.

But to Beth's credit... my grandma was a terrible cook, my siblings and I would run to the hills whenever she cooked. So glad mom, on the other hand, is an amazing cook so we didn't starve... Even though mom taught us the basics, there is that special touch my sisters and I still can't really achieve What I mean is that not all grandmas are great cook by default LOL But Beth certainly is

I thought it was really adorable when Beth admitted she's never made fresh pasta before and was simply doing it the way she saw chefs on TV do it. It really made me smile.

you'd be surprised just how easy it is to make things from scratch but we just dont do so for the sake of time. Anyone can make pasta assuming they just have some extra time and flour and eggs (which everyone should have). Anyone can make Mayo with just oil and eggs (again everyone should have). it's pretty interesting

Chef frank is probably my favorite chef on Epicurious. I'd love to see a chef and home cook doing a budget and selecting ingredients themselves from a grocery store or Specialty store.

Actually you're supposed to taste the ingredients so you (1) make sure they haven't gone bad and (2) to judge how strong the flavor is so you can judge how much to use. Although, not all of her snacking was required...😀😀🍝😍

@@TheCotzi Totally! Both of my grandmothers were… well, I don’t want to speak ill of the dead. Let’s just say they didn’t have very pleasant personalities... But my great grandmother, who was the daughter of Italian immigrants in the 1800s, was my absolute favorite family member and she had the best sense of humor ever. I loved her to pieces, and good god could that woman cook up a storm. I am jealous of my mother because she got to spend so much more time with her than I did. 😢

I know right? I'll be the first to admit I'm a bit heavy handed on the salt. However nothing drives me more insane than seeing cooks put like a "dash" of salt when seasoning meat, veggies, etc. I use at least two tablespoons of salt in my pasta water. My family loves my spaghetti but I hope I'm not killing them in the process. 😜

@@azai247 But Italian-American. It is a cuisine very distinct from Italian cuisine. Italians always talk about how their cuisine is based on simple dishes reflecting poverty and difficult growing conditions. That was not true in the USA. Italians showed up here, and everything was abundant. Eggplant Parmesan became Veal Parmesan, dishes started to drown in sauce, and meatballs became HUGE!!!!

Beth nailed every single step perfectly. Frank didn't stump her with the fancy ingredients one little bit. She's never made pasta before and yet she did it perfectly. She really does know her way around an italian kitchen.

For the people questioning Frank's decisions, here is some explanation. Toasting your noodles like that is common in Spanish cooking when making soups (look up fideo soup recipe). It really does taste good and reccomend trying it. Breaking the noodles let's them fit in a pan/pot and gets them more evenly toasted. Finally, you can cook noodles in tomato sauce diluted with water, it takes around 15 minutes to cook.

There's something so comforting about Beth. Not that its missing in my life, but her warmth and endearing personality is just so delightful and precious - I for some reason teared up watching her and Frank's interaction at the end. Bless her soul!

There’s a great fried pasta recipe out of Puglia Italy called pasta all'assassina (assassin’s pasta). I’ve made it many times and it’s delicious! Check out Pasta Grammar’s version on KZbin. Fantastic!

My mom believes she is Italian. So she says I'm Italian but my dad is Mexican. I am way more Mexican than Italian, sure I like some spaghetti every now and then but my whole Mexican line of family is addicted to tea, including me. I can't handle spice though, sometimes I love it in a salsa but other times I can't stand it.

To me, simpler is better. I like the look of the 18 dollar one, it looked really good and honestly, I'd think that one would be the 200 dollar one. I have a soft spot for cheaper, homemade food cause my mom is the best, I'm sure alot of people feel the same. My family and I have grown up mostly poor so I've learned that cheaper is usually better. Plus my mom makes some mean Mac and cheese on Thanksgiving.

This might be the most wholesome episode of this series yet. Beth and Frank are great foils, and having them both cook Italian food was a no brainer. In typical Frank fashion though there was no actual Spaghetti and Meatballs made in this video, we had a totally different pasta with pesto and a toasted fidello dish with Beth's ingredients. Still all looked delicious though.

You heard them, Epicurious! They want to cook together! That means I wanna see 3 teams of Home & Pro Cooks/Chefs, together, going head(s)-to-head(s)[-to-heads], in competition! Maybe making 3 dishes or courses so the Home Cooks are rotated between the Pro Chefs? Let the Amateurs judge. Then get a Star Chef/Cook, like maybe Rachael Ray or Sunny... Gordon Ramsey or David Chang perhaps, to judge the same dishes? I dunno. I'm no Shonda Rimes. Not a Show-runner. Y'all work it out & I'll watch! Especially if Rose Trout's in there somewhere!
