ok, real Italian here, living in Italy, i hope u didn't meant u added water to your tomato juice because this is a real insult :) For the next time u prepare a real tomato juice like it should be, DON'T ADD ANY WATER, but add a teaspoon of sugar and 2 teaspoon of salt for that full pot u were using, let's say and, in the jar, b4 putting the sauce in it, place 3 or 4 leaves of basil in the jar, just like this, raw basil, and a teaspoon of extra virgin oil (ON TOP of the tomato sauce after u filled the jars) ONLY EXTRA VIRGIN OIL, NOTHING ELSE and remember to BOIL the full well closed jars for 30 minutes at least in order to kill bacteria, if u do that your sauce will be good for years. BB. Btw i don't know wtf u did with that microwave but, forget about it, in italian food microwave ovens aren't even LEGAL, just trash it, or use it ONLY to warm things, but not really to prepare a tomato sauce, please. I almost forgot, u can offcouse prepare a tomato juice with any tomatoes but u should pick a variety called "san marzano" tomatoes, look on the internet to understand what i mean, and buy ONLY ripe tomatoes, almost soft under your fingers and VERY RED.

You mention what not to do for tomato JUICE (which is what is being made here and is for DRINKING), then you go on in detail to explain how to make a tomato SAUCE. That's not what's being demonstrated! Tomato JUICE was invented in the USA--it's not ITALIAN, "real" or otherwise.
