The Bourgogne cheese is one of my all time favorites. I have it in my fridge at almost all times.

is it safe to eat cheese made from unpasteurized milk?

Hey Peter, unpasteurised milk and cheeses made from that milk are safe to eat. Generally speaking, the majority of cheeses that you find in a speciality cheese shop are made using unpasteurised milk. However, there are speciality cheeses that are made from pasteurised milk. Using raw milk (or unpasteurised milk) is a very traditional cheese making method and the flavour is generally believed to be superior and more exquisite because it allows certain bacteria to grow. Since, the milk has been turned into cheese, it is being preserved and safe for consumption. Supermarket cheeses will generally use pasteurised milk. The flavour will be more consistent and it kills bacteria that are deemed harmful for pregnant women, for instance. Turing milk into cheese makes the milk generally more digestible.
