Nice to see Mr Repeat. I like to use a meaty country-style pork rib (Hollywood) rib in my collards. Way back we had fat back in everything. Never knew why they’re called Hollywood! Fancy, maybe?

I just asked my husband what he wanted me to cook for Easter and he said scalloped potatoes! This popped up at the perfect time. I’m definitely making these Sunday ❤ Happy Easter!

My grandmother and mother use to cook collard greens. Simple like you but I never liked them. I had rather have spinach any day. We nearly always had pork roast or ham for Easter and potatoes and carrots and a pie or two for desert. I remember Limon meringue pie 🥧. Happy Easter. Remember it is about Jesus and what he did on the cross.

Ham hock boiled in chicken broth for an hour with salt, pepper, onion powder, garlic powder, seasoning salt & hot sauce. After an hour, put in torn greens with a stick of butter & a splash of vinegar. Simmer for at least an hour 1/2. Can NOT eat them any other way. 😂

We use bacon with low sodium I and my sister are both on Dialysis so about 4 pieces of thick bacon

Wow! All these sides look delectable! I love potatoes any kind of way! That corn casserole looks yummy, and I love Plain Chicken recipes! And thank you so much for the collard recipe. I’ve never made collards. My husband makes them for special occasions, but I really like your recipe. I’m going to try all of these! 🥰

I understand about the vinegar. We always had it on the table when I was little, for our spinach! Moms family was from kentucky.....not much different than the carolinas...lol !!!

Love it, girl! So I'm probably the only one, but hubby has to have turnip green with chopped turnips --no meat to flavor the greens. I know, its crazy. But thats how he likes them. Me--not a big fan of greens--turnip or collards. :)

Not a fan of collards but grew up eating them as well as turnip and mustard greens. My grandmother usually used ham hocks for flavoring. Yours do look good, though! Mr. Repeat is welcome any time!

Great recipes, as usual! I live in Utah and collard greens are very hard to find. My mother-in-law grew them, and I loved when she cooked them.

Hi Jen, This is how I cook my cheesy scalloped potatoes. I simmer my potatoes in 2 cups of milk and evaporated or half and half.until fork tender, about 15 minutes. I then put the peoples prepared baking dish. To the milk, I add a cup of shredded cheese and shredded cheese of your choice, I bake in a 350 degree oven until brown and bubbly for 45 minutes. That corn casserole looks great! I have never had it before. I love the greens too.

I know y’all are not low carb but just in case anyone wants to know how to do it, you can take a can of baby corn on the cob in the Asian isle and grind it in your food processor, add some sour cream and eggs and mix it up and bake it. You’ve got low carb cornbread...💋🧚🏻‍♀️❤️🇺🇸

Love your recipes! We like turnip, mustard, and collard greens cooked together. I sauté 3 cut up pieces of bacon in my 8 qt instant pot with about half a cup of onion. I add a little more bacon grease, put the washed greens on top with several cut up turnips. I add a little chicken broth so it won’t burn and pressure for 17 minutes. They are so yummy! It takes me longer to wash the greens than cook them.😜

You can, but there’s so greens when they’re chopped up. And my salad spinner isn’t that huge. It’s just quicker to use a big ole bowl. 🥰
