The thing is with tapioca pearls, you need to make a caramelised sugar syrup and leave the cooked pearls to soak in the syrup for a while. You then sieve them out of the syrup when you want to use them. Otherwise, they will just be chewy flavourless balls. My partner is Taiwanese (where bubble tea comes from) so I have learned a few tricks here and there.

Sago is not like tapioca pearls. Hami melon texture is very different from cantaloupe or honeydew, it has a light almost foam-like texture - imagine a fine foam which happens to be a solid instead of a liquid.

Hey Barry, black peppercorns can't really replace white peppercorns. They're very different flavors -- both good, but different. Hot & sour soup (a favorite of mine) gets most of its flavor from white pepper and it wouldn't taste at all the same with black pepper. I keep white pepper around because it is really good. I recommend you get a small grinder to use with white peppercorns.

I've always found discussions about authentic food and where and how food belongs in a region strange. For me, food is also about experimenting, trying things out, trying new things. In my small village here in Germany, the takeaway was bought by an Indian and he started offering a currywurst with coconut-mango curry along with endless typical "German" dishes, but many people got upset about this one dish. I tried it and the combination was quite interesting! It was banned from the menu shortly afterwards, but some people still don't go there because he wanted to try something new, this behaviour is totally nuts in my opinion. 🤷♂😂

You did the pronounciation for the Swedish meal really well! And there is a lot of meals in Sweden, a lot of them called "husmanskost", which roughly translates to simple and home cooked. I would definitely recommend you trying Porterstek, the sauce is the main thing! And if you do go to Sweden, especially the north of Sweden, try palt and renskavsgryta! Palt is like a boiled potato dumpling and renskavsgryta is reindeer with mushrooms and a creambased sauce. Absolutely amazing, miss the Swedish food! And something we eat for breakfast - filmjölk, with cornflakes. It's quite sour though, so not for the faint of heart.

I'm catching up on these, but let me tell you, Xinjiang is KNOWN for superbly sweet fruits. It's something about how dry the desert environment is, the sugar concentrates in the fruit and it's delicious. Hami melons are amazing. I'll even eat Xinjiang raisins when I hate regular raisins because BOY those are so good.

I truly believe that using small (not mini) tapioca would have been fine. You may want to try tapioca pudding, if you have never had it. It is a very easy, creamy, comforting dessert. I you add cinnamon or nutmeg it is perfect on cold winter days👍👍👍

We swedes don't really use fresh horseradish either. We get it out of a tube.. (We swedes sure do love our tubed foods) Ohh, and for proper effect, some chopped up egg on top of the cod is higly recommended, along with green peas and some boiled potatoes. :)

About the Mali dish. I make something similar that I thought up myself. I brown chicken drumsticks and thighs, then remove it from the pan and brown some onion. Add can of tomatoes and some bay leaves and all spice. Return the chicken to the pan and simmer till chicken is done. Then, I add 2-3 tablespoons of peanut butter to the sauce to thicken it. I serve it with couscous, blanched spinach and roasted butternut.

I think you'll find Norrköping pronounced approximately like 'Norr-SHIR-ping' (without the sound of the 'r'). I like the 'throw a dart at the map' idea. What about getting an atlas and just randomly opening a page up with your eyes closed and stabbing with your finger? Or have someone move the map under you while you drop a dart from above? Or have a selection of countries to choose from and spin a wheel (or use a random generator) to pick your three? Options!

As a swede I was worried you'd get into the "new Swedish cuisine" and make something that's a fusion of an old recipe and something completely alien. I'm happily surprised that you went with cod, I enjoy a good cod and I absolutely LOVE horseradish! As you sprinkled on that dill I breathed out a sigh of relief, that's when it all just "clicked" into place, the dot over the i so to speak. Good job!

Love this concept, as I love discovering new foods and combinations. There's a channel, blondie in China, shes an Aussie girl travelling all throughout china/Asia and trying the craziest things, but makes it look so normal and sound delicious most of the times. Even things us westerners might find not as appealing when we hear about them. But then she explains exactly what they do to make it edible and mostly sounds super logical and very much edible 😅 except for the crazy spice levels, she handles local spice levels like an absolute BOSS! 😅

It's likely one of the reasons why Elvis burst his heart on the bog back in 1973, alongside all the drugs. Still, I totally get peanut butter and bacon in concept.

Hoi, Barry! If you want to do a food travel series, go for it! I know it wouldn't be cheap, but I'd love to watch it. As much as I like to pretend I have some culinary knowledge, I truly don't know very much about worldwide cuisine, but I'd love to know more. And hey, maybe one day we'll get a crossover or cameo with Abroad in Japan! I know, wishful thinking; but still, starting with Scandinavian countries wouldn't be the worst choice, since funnily, we don't know a ton about their cuisine or delicacies.
