I was in Nebraska last weekend for my grandma's funeral. My daughter and I went to Runza in honor of her. She would take me there everytime I would go visit. Small world isn't it? I love watching your channel!

I’m from Nebraska but live in Arizona currently. First thing I do when I go back to Nebraska is go to Runza! Runza had a whole interesting history and it’s the only place I know where you can get Frings. Half fries and half onion rings. Who doesn’t want that? I’ve made them with bread dough but I’m going to try your recipe ❤️

Yes, Runzas originated from German/Russian immigrants to Nebraska. Lincoln Nebraska (my home town) had the first Runza drive inns and you can still find them today! They are more like a hand-held sandwich with the filling inclosed with a bread dough and then baked. So delicious 🥰

I come to say something like this... We are a Russian/German family from western Nebraska (Bauer-Schott... pronounced SCOTT)... I have my great grandmother's recipe.. we just called them Krout burgers or cabbage burgers... But I have seen people call them beirocks... I've seen instead of hamburger they added bacon. Runza is ok, being from there but they are not that great compared to our grannies cooking...

Talk about a meant to be video for me this week. I have somehow ended up with 3 cans of crescents in my frig and this solves what to do with them! As usual, they all look delicious. I have always pre-baked the bottom crust of crescent dough when I've made something similar. Us Southern girls learned to cook pretty similarly I do believe. 😊 Thank you for going to the trouble to find us ongoing inspiration. I for one appreciate the dickins out of it, and of you!! Great video Momma Mel! The only trick that works to keep my eyes from watering when I cut onions is put the onion in the freezer for about 20 minutes then cut it up. It works so well!

Hey was so excited to see Runza on your video tag as I am a Nebraska girl, home of Runza! You can always adjust the amount of cabbage if your family doesn't like it. I haven't seen this made with crest roll as a casserole. I have seen people take frozen rolls and fill them with the Runza filling. Now, we need to get you some Dorothy Lynch salad dressing!

@InTheKitchenWithMommaMel it is a sweet French salad dressing made out of a dining hall at a Masonic lodge (I think) in a small Nebraska town. It is on the menu at most Nebraska restaurants, along with Rotellas Italian bread! Maybe you could do a series of recipes each state is known for across the U.S. A twist on your recipes by country series you did last year. Maybe your subscribers could suggest a dish or sandwich if you wanted to keep it simple. I'm sure each state has a local sandwich they are known for. If you want to repeat Nebraska, the Reuban was invented in a hotel in Omaha. Just a thought! Thanks for all your great recipes!

I make the Runza all the time. I use 1 lb ground beef, 1/2 lb pork sausage add 1 can cream of mushroom soup and slaw mix. I also use shredded Velveeta. And yes add worchestershire sauce,

Mel, I am from Kansas born & raised. My mother made Bierock and it sounded very similar to your Runza casserole. I had to “google” the two. So it seems that Nebraskans favor the word Runza & Kansans favor the word Bierock. Both are the same ingredients basically as your casserole, but the filling is stuffed in yeast dough and baked. They were so delicious, and a family favorite. Yeast scares the dickens out of me, so needless to say, Thank You Mel for this much easier version!!!! Love your channel!!

Your first recipe with shredded cabbage in it would be good with taco seasoning and Mexican cheese and served with salsa and sour cream! Or Soy sauce, sesame oil, and garlic added in the hamburger mixture. Great video. Also to get a tearless onion chop, keep your mouth open while you chop.--no tears.

I grew up eating bierocks in the school cafateria lunch rotation..everybodys fave! I started making my own. For many years they have been one of my go to freezer filler. I make mine with broccoli and american cheese using homemade bread. The original with cabbage prompted my grandma to declare they need gravy on the top! The casserole form is a fantastic idea! I live in Lincoln, home of the Runza restaurants. They have a lot of other good menu items too, not just the runzas. Definitely worth trying if you're passing by one. They're not national because they use fresh ingredients.

I love watching you Mama Mel! This was another great video! I live in Nebraska so l’ve had several Runza’s. They have a Swiss Cheese and Mushroom Runza that is Amazing! It has cabbage in it but I don’t think quite as much. Also, the cabbage is cooked down until it is very limp and nearly translucent in these. You may want to try that version. It’s so good!!! You continue to inspire. Here in Colorado, we make Runza with American Cheese slices under the top crescent sheet & sauerkraut instead of just plain cabbage. Gives it a twang as you say. 😀 We are a short drive from Nebraska and they actually have a fast food chain called "Runza" and they sell "runzas" which are basically cabbage pockets in a sandwich form. The Runza burgers are great. It is the meat and cabbage filling is baked in a bread roll it was cut open when you order it and then cheese and toppings are added. I make the meat filling in the crock pot. Then I bake it in frozen bread dough. I add a package of lipton soup to the filling. So good.

You could add a drizzle of thousand island on the beef mixture before topping it, to give it that extra zing. A little melted garlic butter brushed on top of that lasagna casserole would have been delicious. I really want to tey that enchilada tortellini. All of these look delicious.

Here's the runza recipe my cousin uses. It's pretty close to the real thing. Runzas 4-1/2 to 5 cups flour 1/2 cup sugar 1 tsp salt 2 pkgs. active dry yeast 3/4 cup milk 1/2 cup water 1/2 cup shortening 2 eggs, room temperature Measure 1-3/4 cups flour into bowl. Stir in sugar, salt, and yeast. Heat milk, water, and shortening until warm (120-130F). Pour into flour mixture. Add eggs and beat at low speed to blend. Beat for 3 minutes at high speed. Stir in rest of flour. Knead 3 minutes until smooth. Cover with wax paper and a towel. Let rest for 20 minutes. Filling: 1-1/2 pounds ground beef 1 onion, chopped 2 cup chopped cabbage 2 T butter 1/2 tsp salt 1/8 tsp pepper Cheese slices (optional) Brown beef and onions. Wilt cabbage in butter and add to beef with salt and pepper. Roll dough very thin and cut into 6”-7” squares. (I make 12 squares). Lay a piece of cheese on each square and place meat mixture on cheese. Bring corners of dough to the center of square. Pinch edges to seal. (Cheese will leak out if not sealed well). Place smooth side up on greased baking sheet. Let rise 40-60 minutes until indentation remains when lightly pressed with fingers. Bake at 350F for 20 minutes or until dough is done.

Nebraska Runzatic here . This recipe is basically the one I use at home. The restaurant ones are made with bread dough but I do like the crescent dough better at home. Runza will ship frozen sandwiches about anywhere in the country, I think. There's a website!

I simply love cabbage and noodles with bacon and onions. I make it about every couple of months and eat it all myself❤No one in my family likes it. So I get it all🎉

If you keep the root attached on your onion, sometimes that helps with no tears when you cut your onion

Good afternoon Mel 😊 I really like your ground beef recipe ideas. I like to use what I call half and half so half ground beef and half Jimmy Dean Regular Bulk breakfast sausage it's a good combination.. I just thought I would share that with you and the group. It's really good in recipes. Also as BBQ hamburgers 😋 I also learn something new everyday. Thank you for your ideas and your teaching methods in the kitchen.❤

I was born and raised in Iowa. And I have never heard of runza sandwich or runs a casserole ever. But my family was not big cabbage eaters. Either. I am. I love it so I think I'm going to try this recipe.

Thanks! I got it Christmas before last at the Dollar Tree, it was in the $5 section. I did see them there this past Christmas, too. It's battery operated, just for decor (no heat LOL) and it's not a wax warmer - a lot of folks were thinking it might be and that would have been so cute!

I have found placing a DAMP paper towel on the corner of my cutting board will eliminate my eyes tearing up while cutting onions. Try it! It really works!

Oh sweetie 😊 I absolutely love that Weight Watchers Cabbage soup. I specially bought that Weight Watchers cookbook for that dish. I use stew meat in that soup. Thanks for these great recipes 😀. Plus I love boiled cabbage too.😅

I have made Runza’s. They are so good. Your filling has all of the same ingredients as the Runza filling. It is originally German, called Bierocks. Instead of a casserole, I use bread dough to enclose the filling and bake them. They are so good!

I am a Nebraska resident. I’ve only had the Runza sandwich, as you referred to it. The restaurant makes Italian Runza, And I believe some other styled ones, but I can’t recall what the other flavors are. I’ve never eaten it as a casserole. I love the Italian Runza, though. If you or your family like this, you should try to make it Italian style.

We have a Runza restaurant in our town. Great food...burgers, different types of Runzas, frings...a combo of fries and onion rings. Need to taste an original Runza.

My family’s recipe has Worcestershire sauce in it. They are cooked as individual serving meat pies. We have German/Romanian roots, which is where I thought this dish came from.
