Vegetarian/vegan substitute for bonito flakes or dashi: kombu seaweed and shiitake mushroom. You can also find vegetarian dashi packets in Asian groceries. I even found it in an American store near the soy sauce. And of course use tofu or tempeh instead of meat.

Hello Taiji, and thank you for these very simple and wonderful recipes. If you want to try a portuguese version: slice the eggplants, put them on an oven tray, drizzle some olive oil over it, plus salt, rosemary leaves and some minced garlic. Roast in the oven for 20 minutes. Deeeee-licious! 🤩🤩🤩

I made the steamed eggplant with spicy sauce. Had a big eggplant so had leftovers second and third day and found the dish tasted better the longer I kept it in the fridge!

Do you ever salt the eggplant before cooking to draw out bitterness? 🤔 Also if you have gas you can char the eggplant to add a smokey flavour, very delicious 🤤

cool, from Canada! I got it as a bd present, so I don't really know, but it says Kuechenprofi (meaning kitchen professional in German). no idea, if it is sold also outside of Germany. but its the same as any old garlic smasher, I think.

The grilled eggplant in the oven gets more aroma and doesn’t explode if you cut it at least in half. And Mapo Something without Szechuan-Pepper is not „mapo“. But I like the combination with eggplant instead of tofu.
