You can switch up the grain base for these bowls as well for variety. Any of these would work - spelt, kamut, millet, barley, teff, freekeh, bulgur, sorghum, farro, einkorn, and emmer; and the pseudocereals amaranth, buckwheat. I use a mixture of 2:1/2:1/2 brown rice, barley and something else. These bowls are also a great way to use up leftovers for a quick lunch the next day. Great video!

The bowl with the roasted veggies and chicken was delicious! I didn't get a picture though. I have made it a couple of times. The first time I was hesitant about the mint but I'm glad I added it. It gives the dish a little something extra but isn't at all overpoweringly minty. I can't wait to make the others.

I love how you can make such an intricate and delicious looking bowl in your own home. I’m grateful for your channel because I would have never bought garbanzo beans or tofu (well not too often anyway). Especially working in speciality cafes I started getting introduced to cherry tomatoes and feta cheese. It’s crazy how new people and new places can broaden your horizons and tastebuds. Speaking of: I’m going to make a healthy soup tonight because you inspired me

They all look beautiful, healthy, and delicious, Dzung! Mediterranean is one of my favorite cuisines. I dated a Lebanese guy (he's like 3rd or 4th generation, though) and one of my best friends growing up was Jodanian/Palestinian. Both their families own restaurants, but hers owns a Mediterranean restaurant so we talk a lot about food. Also, my first job was at a French bakery working for a Lebanese guy whose family was a big influence on the food in our town. Unlike most people, it took me a long time to even like hummus - I still prefer tabouleh over hummus - because you know, beans are dessert to Vietnamese people. LOL! Anyway, I thought for sure you'd use chickpeas instead of the white beans because it seems like you were leaning more Middle Eastern with the Mediterranean thing but I guess you were going more Italian there. :) Thanks for sharing as those recipes look great.

Looks awesome. I have to try them out. Can I point out tho...they are prawns not shrimp (shrimp are whale food tiny 2cm). The "shrimp" thing stuck from a tourism ad back in 1990 in Aust (thanks Paul Hogan). Yes they are in the same family tho but in Aust and UK you get funny looks asking for shrimp at a grocery store.
