Hi Tanya, Whenever I make cookies I like to place the mix in the refrigerator for a while (30 or 40 minutes) so it is a bit easier to handle and it keeps the chips a bit more solid, Love your recipe, a treat I'm going to make today or tomorrow! Thanks for sharing! Vinnie the "Cookie Monster"

I mixed 1/2 cream cheese, 1/2 vanilla extract, the can pumpkin mix well then add one egg mix again now add the cake mix if too dry add a little at a time (1/4) of milk or water or heavy cream. Can add dried cranberries, chopped nuts and/or soaked raisins in very hot water, drained then add into the mix.

Tanya, your pumpkin cookies look GOOD. Have you ever tossed in some shredded carrots? or would the carrot flavors get lost in the mix?

Hi Mark, Thank you! I have not but I think it would work fine. I'd finely grate the carrots first to ensure they bake along with the mix.

Tried these for the first time tonight. Taste is good but is the consistency is "gummy." Is that expected or did I do something wrong? Followed the steps to the letter.

I’m not sure why. Maybe it’s the cake brand used or you may need to bake them longer. I make sure to flatten them too before baking.

I would guess because its cake mix and not cookie dough… You shouldnt bake cookies using cake flour… meaning theres baking powder and baking soda….
