With nutrient quality - is there much of a difference in quality between sourdough, rice, (sweet) potatos, pasta etc and also store bought red meat v farm bought (grass finished) red meat?

Definitely an issue im struggling with myself (undereating that is - currently on a "cut" for summer - in reality im already beyone "beach lean" so at this point its really just a justification for myself - but I am currently running 10km every day, first thing in the morning, walking at least another hour minimum and in the gym 6 days a week for 60 min minimum and on 2,500 kcal daily avg and I know perfectly well that, while for a normal person this is plenty, even on a "cut" this is way too little for me but somehow its almost become a part of the "perfomance" itself in a way to keep up very heavy training while cutting hard. In a toxic way its rewarding; Dunno how to properly explain it - like "i can perform this well with such little fuel" - which im aware isnt sustainable. Im sure at its core its rooted in some sort of body dysmorphia but yeah, hard to beat although im working on it.) so this was a nice episode! Btw, what further complicates things is that, while id be lying if I said im making progress in the gym, I have barely gotten any weaker in the 7 weeks ive been on this regiment and my running performance on the other hand is actually improving (its really only the question how much more I could be improving with better food), all while im getting extremely lean at this point. Its just like mentioned early in this podcast, outside of training is where I really feel it more and more but the positive performance makes it even more difficult to increase food since technically everythign is going well so to speak. Silly first first world issues but hey :P Cheers lads.

Hey mate , I can relate too , although I have issues with reactive low blood sugar in the meals following training and this only happens when I'm cutting , do you have this also ?
