Just a quick tip. When you want to squeeze the water from your shredded potatoes, put down an old piece of cotton, like an old tea towel and line that with paper kitchen towels, then put the potatoes onto the middle, lift the corners of the cloth and as Chloe suggested place the bundle in a sieve or colander, before attempting to squeeze and twist the bundle to remove the excess water. If you want, you can then open the bundle and scatter a small amount of flour through the mixture before remaking the bundle and squeezing out even more liquid. Then proceed as with the method in your recipe. In the recipe for the Dutch Baby pancakes I would suggest using self raising flour and make the batter a little thicker. Have the fruit ready to go into the pancake before putting it into the oven and while there’s still a little fluidity in the batter add the fruit and a light sprinkle of the sugar, before returning it to the oven. If you time this right some of the fruit will sink into the batter at least partially. You can also use a blow-torch or a grill (Salamander) melt some of the final scatter of sugar on the finished dish (similar to a crème brûlée).

I lobe Dutch pancakes! I use a pie pan, melt the butter in the pie and pour the batter directly in the pan by pulling the oven rack out. I've only had them serbed with a drizzle of fresh lemon juice, butter, and confectioners/powdered sugar. I first had them at Perkins, a restaurant here in the USA.

The reason the cabbage smells like mustard is because they are part of the same plant family (Brassica)! There are a surprising amount of vegetables that we eat (kale, mustard, broccoli) all descended from mustard plants, it's really cool. This was a fun video, Barry, and always good to see Chloe!

A clean tea towel is generally the item of choice for squeezing out all the water from the grated potato when making potato pancakes. If you do them again give that a try and I think you'll agree it works better than the kitchen roll.

Latkes are an Ashkenazi Jewish creation. They are usually served on the High Holidays and/or Passover and made with Matzoh Meal. You can serve with Apple Sauce or Sour Cream, or both.

The latkes are an Eastern European Jewish food. I myself am Jewish and make them every year for Hanukkah. To be considered proper Latkes they MUST have the potatoes and onions grated by hand. Also in the recipe I have never seen breadcrumbs in the ingredients list, always flour.

Well, there is a story behind the German/Dutch 'confusion'. In the 16/17th century "Duitsch" (literally the Dutch word for 'German') meant 'Dutch' in a huge part of the current Netherlands because the word 'Nederlands' (Dutch) was introduced in the 16th century. Also, the Netherlands in their current 'political/geographical' form didn't exist at that moment... so 'Duitsch' was more common than 'Nederlands/Dutch' and therefore there will always be confusion in the English speaking countries if a thing is really from the Netherlands or from Germany. But lovely to see Chloe again. And it still hasn't changed that she isn't too fond of kneading things :)

On the whole potatopancakes, I think atleast half of europe have their own versions of it. Sweden got so hooked on potatoes that we have two versions. Råraka & raggmunk, råraka is always made with raw shredded potatoes while raggmunk can be done with potatoflour or shredded cooked potatoes if I remember correctly. Sweden also have something similare to the dutch baby, we just call it thickpancake we also have a version of it were we put ham into the batter. We also have something called saffranspannkaka/saffronpancake or gotlandspannkaka/gotlandspancake that I highly recommend trying. So good.

Good job! I recently learnt how to make Okonomiyaki during a trip to Japan and now it is a regular feature in my repertoire. It was developed after WWII when good food was limited in Japan, as a way to use a variety of little scraps to make a nutritious meal. It’s great for using up flavourful odds and ends from the fridge. I recommend buying kewpie mayonnaise if it’s available in your area, and also bonito (tuna) flakes for garnish. They are so delicate that they crinkle and “dance” on top of the hot pancake. Delicious!

A great episode as usual Baz, I'm watching from Canada and funnily enough had a Dutch baby for breakfast. I would 100% recommend using a cast iron and using a sour dough recipe variation. Also, instead of sugar and fruit, just some cinnamon works a charm and then drizzle with maple syrup to your liking! It's a beaut.

You made the right choice grating the potatoes for the latkes, the texture really suffers if you blitz them in a food processor. For the dutch baby, you could squeeze a lemon over it for extra yumminess.

Regardless of whether or not the potatoes are grated, latkes are distinct from hash browns or rösti because they're bound with egg and crumb/flour.

Okonomiyaki is traditionally made with napa cabbage, and will have bonito flakes shaved on top with a savory/sweet sauce. We make them fairly often in my home, even though we arent Japanese. My personal favorite is with tako (octopus!) But the wife doesnt like trying to cook it, lol

I love latkes! I have them with applesauce for a sweet treat. For savory latkes; I’ll mix in some savory seasoning (garlic, onion, paprika) and eat with sour cream. My favorite filling for a Dutch Baby is sliced bananas with warm homemade strawberry syrup.

Yes !! Please do make the Dutch ones. Poffertije - which i think literally translates as little pancake puffs. My Dutch friends taught me some Dutch and the tije (said te-yeah) is added to words to make them "a cute small version" which is exactly what those are cute small puffed up pancakes often served drenched (and i mean drenched - think snowdrift here!!) in icing sugar. I was lucky enough to try them in Amsterdam and they are amazing

That dutch pancake is great with homemade jam made from a mix of strawberries and blueberries and then add some icecream "preferable vanilla due to the homemade jam adding an layer of flavour to it " you need to put the jam on the icecream when the pancake is hot so the pancake can melt the icecream with the jam ontop of it and it creates this amazing topping i swear !

We also have latkes in Germany, here they are usually called "Reibekuchen" or "Kartoffelpuffer" and are sooo delicious. I like to buy them frozen and if I'm in a hurry, I quickly pop 1-2 of them in the air fryer and add a dollop of apple sauce or jam. My parents used to make them when I was a child, when we had appointments after school (back then school was until 1.15 pm at most) and we wanted a quick lunch. The dutch ones are called poffertjes

There's a Japanese grocery store in Seattle, and I've not only had the good fortune of finding pre-made Okonomiyaki in their kind of deli section, but I've also found Okonomiyaki batter mix and the sauce. Also, the mayo that they would use is one called Kewpie mayo, which is a much richer mayo than the more European variety. Beyond that, though, I grew up having Dutch Babies for special occasions with my family, and quite often we would actually do them with powdered sugar and orange juice, and that combination of the very eggy batter with the orange juice really just works very well.

with the dutch baby, we put a very light layer of whipped cream, or cool whip, on the surface before adding berries or other goodies. It helps keep them in place and not rolling around.

I used to cook at a restaurant that served Dutch Babys, which we called German Pancakes. They were served with a side dish of whipped butter and powered sugar, and lemon wedges. The customer could mix the butter and sugar inside the bowl of the pancake to make an icing, then drizzle with fresh lemon juice. A glass of chocolate milk on the side... nothin' better.

I’ve been craving Latkes ever since trying them as a kid at a cultural festival thing, so I might need to try that recipe. The okonomiyaki pancake also can be done completely vegetarian, there’s a sushi place outside my work that does them, basically the same idea as the one from the video but without the pork and adding in some other veggies (I think peas and shredded carrot?) and the main selling point is the sauce, the one in the video would have probably been elevated even higher if Japanese mayo was used (Kewpie mayo is crazy good and based on how I keep using it on everything it might be addictive)

When I was really broke, I tried making scallion pancakes. Just 3 ingredients, flour, sesame oil and scallions. Way easier than I expected and so delicious. The pancakes you couldn't think of are poffertjes. They do require a special cast iron pan with dimples. The batter is similar to a crêpe, although slightly thicker (buttermilk consistency) and it has some baking powder. They're traditionally cooked in vegetable oil, flipped using a fork, and served with slices of salted butter and loads of icing sugar.

Have you ever been to a dutch pannenkoekenhuis or pannenkoeken restaurant? They serve all kind of pancakes not crepes.. with all kinds of toppings either within or on top. Either sweet or savory.. Cheese and speck/bacon with a pancake sirup. 😋

Only time I ever heard of a Dutch Baby was in the Bobs Burgers episode "Christmas in the Car" where the family ends up at a diner and the mom Linda orders one off the menu.

Potato pancakes are a favorite in my extended family. My mom used to make them as a teen when she had to prepare dinner when my grandmother was working. All by hand for 5 people. Then we found frozen potato pancakes and they are actually really good. Home made once are in our opinion only slightly better. The apple sauce is always homemade with apples from our orchard.

Try them the proper Polish way, with a savoury sauce - mushroom or goulash or even bolognese style tomato& beef.

Dutch tip: if you are going to attempt poffertjes (the small pancakes from dutchland) you do really need a cast iron poffertjespan. You won’t get as good of a poffertje from a non stick pan

Latkes are called Reibekuchen in Germany, but that Dutch baby…. Never seen it,never heard of it
