I don't care for sweet potatoes, but I have a story about them. When my husband was a small child he was a prisoner of war for 3 1/2 years, held by the Japanese who invaded Indonesia. They were starved deliberately, and they made the little kids work in the garden where the Japanese guards grew sweet potatoes and cotton. They would sell the cotton, using slave labor. My husband would sometimes hide a sweet potato under his shirt and bring it to his mom to feed her, him and his brother.

Not sure how long they've been around but my dad was born in 1917 and lived mostly in Texas. He loved them and we had them often when I was growing up in the 60s and 70s, so they must have been around before then. Ah, google tells me 1947.

Helpful hint for working with sweet potatoes! Pre-cook them in the microwave for about 3 minutes. They will peel and cut way easier. Let them cool before handling, and just check them at 10 minutes in the air fryer, and adjust time accordingly. If you dont want to 'nuke' them, you can also do it on the stovetop; bring water to boil, put in whole potatoes and let boil for about 5 minutes.

Oh, was that Gideon in the ending shot? He is so cute. With sweet potatoes, I think it is all about what texture you enjoy - crispy little squares roasted or air fried, or baked to a nice softness. I think doing that last recipe on a baked one would be yummy. There are a few companies doing sweet potato fries (that are frozen) and some of those are so good, and with ranch dressing to dip they are excellent.

Love you Mandy and Steven! I ventured out and bought a sweet potato last week! That sweet tater tried to kill me lol! No joke that they are Hard to cut! For some reason when my knife wasn't going through, I thought it would be a good idea to pick it up in the palm of my hand and continue trying to cut it. Don't do it folks! Sliced my hand wide open... then the Urgent Care bandage caused a Massive pressure blister above my thumb 4 days ago. Do let Steven chop those super hard, delicious things Mandy! This was prior to seeing this new video...but I pan fried that sweet potato in butter and chili oil along with additional seasonings. It was Incredible!... except for tryin to kill me 😂
