In india we take small green bitter gourds scrap thier uneven skin of and cut it vertically de seed it and let that bitter gourd sit in brine for sometime. Onions,garlic,ginger along with the removed bitter gourd skin is sauted with indian spices then it is filled in bitter gaurd and it is then closed with thread and bitter gaurd is shallow fried. I hated bitter gaurd before and that dish is now my fav. U should try it its called 'bharwa karela'

the brine sounds delicious! I’ve had bitter melon made by Indians, they were soooo good. I think it was done similar to the way you described.

We generally eat them when their green, never tried them when ripe, i think the salad sounds interesting,would love to try it out :)

I've heard that you don't see too many ripe ones because they turn bad quickly once ripe. My friend gave me a garden ripe bitter melon today, that's why I'm here!

That salad is on another level and I will have to try it. I am stratifying some pomegranate seeds right now and I guess I will add bitter melon to my seed order. Thanks for this, here in the U.S., we do not know much about this melon. The name alone will keep most people from trying it.

In Taiwan the bitter gourd is eaten only when they are still green. Maybe that's because the wild bitter gourd which is also eaten is poisonous when fully ripe, so by extension people think that the domesticated bitter gourd might also be poisonous when fully ripe...one day I'll try to cook a fully ripe one, I'm curious to discover how it tastes...

I grew these last year, and im growing them again now. Ive never tried one that was full orange (they liquify in as little as 24 hrs once ripe) - Ive always cooked them while green.

Hi Wendi, I just recently found your channel and really love your videos. I'm growing bitter melon for the first time this year. I had never heard of eating them ripe. A lot of English-language sources say the ripe ones are toxic, but I realize that traditional food knowledge doesn't always leap the language barrier. Are the ripe ones commonly eaten? Should you avoid eating a lot of the seed membrane and ripe gourd? Any information you're willing to share would be greatly appreciated. Thank so much for the content!

I am about to try tomorrow these bitter melons. I have green ones so I don't know if the salad option would be good for that but i sure try, because i have pomegranates. Maybe I will do the salt-water trick for the bitterness. I will sure try the omelet too. Thank you for the vid.

Wow,learning as always something new here with you dear Wendi! Recently saw some Calabaza China Bangaña at La Comer supermarket, bought one and that is why I'm here, looking for a recipe to make it BUT I had no idea you could vine ripen the Bitter melons and this diminishes the bitterness but when you tell us the green ones are more bitter, so if you can stand the bitterness and like crunchy veggies, go for a green one, like the ones at La Comer. We generally eat them when they’re green, too. Normally when they’re that ripe, i i keep the seeds for next years harvest. And never thought of cooking the yellow part. I find them too mooshy.

I went to the market this last Saturday and I saw behind table a crate with ripe bitter lemon. So I ask if they were throwing them away and if I could get one for the seeds. Today while cleaning the seeds I was wondering how the red skin of the seeds tast and wow, it taste so sweet. Then I thought how the ripe better lemon would taste cooked I am not disappointed either. I am at this moment enjoying a bowl of rice with stirfry of ripe watermelon with dried shrimps. Good eating 😋

My Chinese restaurant used put it in beef with black bean sauce. They stopped using it, probably the non vegetable eaters wouldn't touch it. It went great with the dish imo.

Good job Wendi. Bitter gourd is a very healthy food, but not always easy to come up with ideas of how to use it. Your recipes are certainly good. I especially liked the sweet-bitter salad. Well done.

first, I've never seen gold orange color bitter melon b4... out of curiosity, does gold one taste more bitter and more sweeter than the original green one???? I know red and yellow bell pepper taste sweeter than green one for sure..... is it OK to prepare gold one to make vietnamese bitter melon fish stuffed soup or Hong Kong style stir fry?????? thanks for sharing varieties of bitter melon recipes.... cheers.

Both bitter ripe or unripe. I bought the ripe one because l'm only after the seeds to grow in the next spring, but because it's a bet pricey l decided to cook it after l removed the seeds. Bittergourd stir fry with eggs and l can say there's no different between ripe or unripe taste they are the same

Hi Wendi I love how you are using this vegetable, I only just discovered it. I understand it is great for detoxing purposes. The ones I got are very light bright green and firm. I scooped out the core with seeds and added a whole one to my green juice recipe that I always make which is generally perfectly balanced in flavour: sweet with the pink lady apples, spicy from the ginger and cilantro and + kale, spinach, celery, parley, white cabbage, cucumber, jalapeno and green capsicum, lemon and lime. But once I finished and did a taste test it was soooo bitter almost unbearable. Can you please tell me is there something else I should of done to prepare it to remove some of the biterness first but would still allow me to receive the full health benefits?

Wow. I didn't know ripe bitterguard is eaten too. I've never eaten one yet. Some bitterguards ripe in my fridge lol. What to do with it? And sometimes bitterguard has mold on it. Is it safe if I scrap it and cook it as usual?

I eat both kinds ripe and unripe. For me it depends on what I’m making. Some online said ripe bitter melons are poisonous - so you just have to do what is comfortable for you.

All green bitter gourds can turn yellow when ripe. You just don’t get to see that since market gets the fruits that are picked young and hard. Lots of Chinese and Vietnamese seem to prefer most things to be crunchy. I did not make any dessert, ate the skin around the seed plain. “Learn and grow everyday”. Love your quote!

Hmmm.. We eat that when it's still green and throw it when it's ripe. From now on I'm not gonna throw it when I gets ripe. Maybe my kids would like it better when it's ripe.

Why do you waste time cutting the ends off the mushroom stems? Just eat them, they taste the same as the rest of the mushroom!

Yes, just leave out in the counter for a week or so it will ripening up.

I recommend not eat ripe bitter melon, I'm pretty sure they are toxic. Some people can eat it but I dont recommend it o.o.

The reason not eating it ripe cause it becomes toxic. I really hope this person does her research first before making these kind of videos. And pregnant women and people whos diabetic shouldnt eat gourd.
