Sapna.............our family does the same preparation w/cucumbers...............choose the long skinny ones, and soak in salt water, so I will definately do the same w/bittermelon. I know how medicinal they are and the taco idea (i have made the mango salsa before) is an EXCELLENT suggestion. I LOVE how you combine ancient ayurveda recipes to our lifestyle and grocery stores here. THANK you for all you do!

Thank you for this recipe, I am cooking it tonight. I have whole coriander seed, do you dry roast them like the cumin before grinding into a powder? I grew my own bitter melon this year, what a fun vegetable to grow!
@BeSpiced
@BeSpiced 5 жыл бұрын
Roasting whole spices before grinding is always an excellent way to wake up the volatile compounds in spices. So yes, please roast the coriander seeds before grinding them just as I show in my video on how to make roasted cumin seed powder. I am looking forward to grow some bitter melon this year too. Wish me luck!! Namaste.

Thank you so much. This recipe is wonderful for everyone especially for those with elevated blood glucose. A little sugar/ jaggery is completely fine. One needs to focus on the overall carbohydrate intake (both quality and quantity) in a meal to be concerned with blood sugars. Namaste.

I just found your recipe I love it thank you. Im retired and I live in Mexico 6 months and California 6 months. My question is can I use Fresh mango juice to replace the mango powder? theres plenty mangos here but very difficult to get the powder which I know powder for me is better because of the carbs in it. And I haven't found the powder easily I grow my own Bitter melon here in Mexico but I buy it in California I use it because of my health and it helps me a lot with inflammation and my Diabetes it also helps with my eyes. Also since using bitter melon my cholesteral level has decreased tremendously.
@peterg3947
@peterg3947 3 жыл бұрын
I would say no, you cannot use fresh mango juice to replace mango powder because mango powder is made from unripe mangos which are sour and the whole point of adding it is to add sourness. You could try adding a little extra tamarind concentrate or a little fresh lemon juice though. However I would recommend you just order some mango powder online which should be easy to do or take a trip to your nearest Indian grocer.

We have plenty of this karela in the Philippines, just exactly what you have in India, we also have the other variety which has smoother outside form and less greener in color and we call them ampalaya in Tagalog and/or amargoso (. From Spanish amargo or amarga ) courtesey of Spanish colonization of the Philippines.

Does the completed dish still taste bitter? Is the dry cumin pre-roasted or is it the a specific one to buy that steps so? I was also told, if the outer part of the karela is scraped off it would reduce the bitterness. Is this true?

Some bittermelon is not really bitter. When I was young, my mom will rubbed with salt, squeezed and rinsed it in water. Then, she will saute it in onions, garlic, tomatoes and some meat or shrimps , salt/ pepper , then will add the bittermelon, sautéed for few minutes until little tender then followed with eggs (1 or 2), mix and done. Best served with white rice. Now a days, I don't wash with salt, cooked the same way.

@BeSpiced
@BeSpiced 5 жыл бұрын
It is bitter. Lots of folks try different things to get the most of bitterness out. I don't agree with it because then you are not enjoying bitter melon for what it is....bitter! It is an acquired taste. The spices and a little jaggery or sugar helps with balancing the bitterness. But I don't recommend messing with the goodness of bitterness to remove its bitter power. My humble Namaste to you.

Avoid jaggery(sugar) if you are diabetic.
@BeSpiced
@BeSpiced 5 жыл бұрын
Sure. You can in fact completely avoid the sugar/jaggery in this dish. I added it since bitter melon can be too over bearing for people who may be trying it for the first time. And in my home it helps for my kids to accept this dish which is a huge bonus for us. But, you don't need it. Also, from a dietetic perspective, a little sugar/jaggery is completely fine even if one has elevated blood glucose. The total carbohydrates in a meal depends on multiple factors. Namaste.

Good informative video. Crappy recipe though 🙂 1. You don't have to salt the bitter melons if you wish to retain the water. Personally I love to keep it simple stu (KISS) 2. There's no need of any of those spices or aromatics - it takes a while for the melons to cook and all the spices get burnt at the bottom, as can be seen. If you have to add the spices maybe do that in the end. Unless you're making soup where no chance of burning 🙂 Peace!

beSPICED - I luv your presentation & instructions, but please "don't" allow that kind of music to accompany your videos in the future. Very annoying & distracting. It doesn't complement the topic at all. It belongs in a dance video "not" a cooking show! PLUS it overrides your voice. At times I can barely make out what you are saying. This is not very professional at all.
