Nice video Erwan... a little tip for next time, if you take the total volume of sliced onions divide into 3 equal amounts then saute in 3 steps... The first amount til translucent, then second amount in, when the first amount is slightly beyond golden then throw in last amount til a little beyond golden... What happens is, you are developing three different levels of caramelization which gives your onion soup 3 distinct "sweetness levels" adding more depth of flavor... I liked the idea of adding Cognac, in the past I've used Cream Sherry and a little Worcestershire to taste... I wish to have a guy friend like Erwan. One who can cook well, no flashy culinary school background to brag about, and one who's not cocky about whatever he cooks. Humble lang and very open to many different cuisines and who is not a snob when it comes to authenticities of dishes. And of course, who will happily cook for me! Anyway. Is it just me, or does the QC of the video got some noticeably weird quality? What i notice (especially in the earlier part of the video): 1. There's some frame that has a sudden colour shift 2. Same with brightness in some frame 3. The sync between Erwan's lips and voice isnt propely match Though besides that, love the content! An easy yet very versatile meal..
