I am from the Netherlands, a heavy cheese and dairy consuming country. You can use lactose free milk instead and most of the old cheeses don't have a trace of lactose at all anymore like parmezan, old cheddar, Gruyere, old Emmenthaler and old Gouda. You can read the ingredients, if it doesn't contain carbohydrates than it doesn't contain lactose at all anymore. It is all eaten by the cheese bacteria. Also sour yoghurt will not contain any lactose anymore.
